I am with Mrs. Ninja! I believe when vacuum sealing the meat with the seasoning, it opens up the pours and allows the flavors of the seasoning to penetrate the meat deeper which makes it more flavorful. I do this all the time. Even if I do not sous vide. Just yesterday , I grilled up some prime rib eye and seasoned them up then vacuum sealed them for a couple of hours before grilling them up on the charcoal grill and they turned out great and flavorful! Much more than when I used to just season them without vacuum sealing them.
So having tried neither rub what in your opinions is the better one Fogo rub or this one used in today’s video . Thank you very much for the videos you are good people

What about seasoning the day before and leaving in the fridge....like dry brining? My grandmother used to do that all the time. She said give the meat 24 hours to absorb the flavors of the seasonings. Great shout out to all the health care workers! My thanks and prayers go out to them too!
@@SaltyTales I recommend you to use thick fillet steaks to that experiment so you'll definitely be able to tell if there's a difference. 3 days ago I did it like that, 20 hours in the fridge with the spices on, on a cooling rack with no cover, and sous vided it to taste. The salt, freshly ground black pepper, and garlic powder penetrated my 2-inch fillet mignons very thoroughly. Pan seared it in tallow to give it some fatty hint. Imagine the tenderness and juicyness of the fillet with all the flavour of a sirloin steak. I never had the nerves to leave my fresh steak for 24 hours but I didn't regret it and will do from now on. At least overnight. You're one of the 3 reasons I started sous vide a year ago and I love every second of using it! I love your videos, keep up the good work! I wish good health you all! And finally, I'll be able to put my hands on a frozen entire picanha very soon... and my first one will be a wagyu picanha! First wagyu, first picanha... "Only" Australian BMS 4-5 but for a first experience it's perfect - and in the UK not much to choose from if it comes to picanha... I can't wait for it!

Thanks for doing this experiment! Something I was curious about but hadn't tried yet. I season then vac seal (and let it sit over night), then sous vide, and after add a small amount more seasoning right before searing. I find it gives the best outcome. Rub gets absorbed over night, then mixed in and cooked with the juices during sous vide. Then fresh seasoning added before searing to get caked onto the crust. Just need to be careful not to over salt it.

Can you try this....sous vide like 7 steaks. And put them all in the fridge (sealed) don't use seasoning (seasoning might preserve the meat and change the texture) ... Reheat one every day for the following 7 days in the sous vide bath... then season and sear as desired. I got as long as 3 days and it still tastes pretty good. 👍
I always wondered if it really made that big of a difference to season it before putting it into sous vide. I LOVE to taste the meat and the char flavor over anything else (at least with steak and other cuts of beef) and I've had some times when I season the meat to much before putting it into the sous vide and all I can taste is the seasoning. One time I got a family pack of steaks and I had one or two left over, so I thought I would make it easy to cook them later that week by seasoning it in advance and vacuum sealing it. So I season then with salt pepper and garlic and put them in the fridge for a couple of days and when I pulled it out and cooked them they tasted like pastrami. Which, I do like pastrami, but not when I'm eating a steak. Did I leave them in the fridge seasoned for to long? I'll have to try seasoning my steak after sous vide. Great outcome! I'm excited to try it myself!
Any chance you May do a “marinade” side by side comparison on chicken for the grill? We have “Dales” out of Alabama and find it very versatile for a variety of foods. I know you don’t typically use marinades but I would love to see your take on some of the top rated marinades. Love the channel!!

interesting side test. I was wondering if you're looking to see the impact of the rub if maybe you shouldn't use such amazing meat so we know what the impact is on cuts we're likely to actually prepare. Basically comparing how much those approaches can bring up a lower grade than well ... Wagyu :)
you do a lot with when to put something on a steak or when to do something with it, you should do some things about quantity, like how much salt to put per pound of steak or something like that
Okay bro fantastic video but here's what I think happened when you season it first and then put it in your bag and seal it tight the flavors penetrate deeper into the meat and when you season afterwards it is more fresh and your seasoning doesn't have time to penetrate all the way into the meat it's more of an on top then it is going all the way into the meat like the first one

The Test could have been not the Taste of the Steak but the Tenderness of the Steaks. From what I understand is with the Sous Vide, it makes the meat tender.
I feel a bit embarrassed - cause I don't want to nitpick. But there is a problem with the test: Ninja, you didn't only tested if a rub taste better before or after sous-vide, but you re-tested as well "SV dry brining". Here is the thing: even though you have directly after applying the rub to the steak put it into the water bath, the salt in the rub had sufficient time to change penetrate the meat, and basically "seasoned the surface of the meat" but also the salt (alone) could penetrate deep into the meat. Maybe the verdict is: rub the meat with ½ the rub and vacuum. Keep it for some time (even over night) in the fridge. Then sous-vide it. After that add a bit more rub and finish it. Also: despite the last time, I would apply a bit oil to the sous vide steak, so the rub can stick but also soak up (kinda fat blooming?). *Great video though.*

What I've noticed when you sous vide, there isn't as much liquid in the bag like when Guga does it. I wonder why.
That depends on what you use on the meat, salt will make it loos juices as well as other spices. Also I only cook it for 1 1/2 hours.

The Test could have been not the Taste of the Steak but the Tenderness of the Steaks. From what I understand is with the Sous Vide, it makes the meat tender.

I feel a bit embarrassed - cause I don't want to nitpick. But there is a problem with the test: Ninja, you didn't only tested if a rub taste better before or after sous-vide, but you re-tested as well "SV dry brining".
Here is the thing: even though you have directly after applying the rub to the steak put it into the water bath, the salt in the rub had sufficient time to change penetrate the meat, and basically "seasoned the surface of the meat" but also the salt (alone) could penetrate deep into the meat.
Maybe the verdict is: rub the meat with ½ the rub and vacuum. Keep it for some time (even over night) in the fridge. Then sous-vide it. After that add a bit more rub and finish it.
Also: despite the last time, I would apply a bit oil to the sous vide steak, so the rub can stick but also soak up (kinda fat blooming?).
