- I'm at a loss for words for these Birria Tacos; they are simply delicious! Unlike many taco recipes, this traditional Mexican dish involves carefully slow-cooking the meat stew in chili & spices to give it its tender, juicy, intensely flavorful finish! Follow along as I attempt to make them from scratch, and comment down below with what you think I should make next! ⬇️
Ingredients:
For Birria and Consomme:
1 ½ pounds bone-in chuck steak
2 pounds beef shanks
5 ancho or pasilla chili peppers
5 guajillo chili peppers
2 dried chile de arbol
4 tomatoes, halved
1 white onion, quartered
12 garlic cloves, peeled
1 teaspoon oregano
½ small cinnamon stick
2 teaspoons cumin seeds
6 bay leaves
4 whole cloves
1 teaspoon black peppercorns
¼ cup white vinegar
Kosher salt, to taste
Sugar, if needed
For Serving:
Corn tortillas
White onion, chopped
Cilantro leaves, chopped

Personally I like waiting until the next day, scrapping the fat from the top of the consommé and then using that fat to fry the tacos.
