The 'force early harvest' button is your friend! Farmers won't harvest anything outside of the harvest months otherwise. Also you need to get more families and place them all into one farmhouse until it's full and plant much bigger fields. Then in winter take them all out of the farm, except maybe one family, and then they can be the transporters and builders etc. But forcing early harvest on 2 fields every year means they are also plowed and sowed early too so it becomes a good productive cycle to get into. I have 7 large fields of about 1.7 Morgans and force early harvest on the two biggest of wheat and have enough bread for the largest sized settlement. Also make large back yards so families can have large veggie plots and smaller back yards for chickens etc as these food sources really help.
