You can add a handful of rice into the pot at the start, it will make the soup a bit thicker and creamier if you don't have cream on hand. The rice cooks in the pot and then gets blended in.
I just made this and it was very good. One thing I would note is that there is plenty of salt in the 2 vegetable stock cubes I used so don't go overboard like i did with the salt seasoning.

That onion/carot/celery (with maybe a touch of garlic) is just basic Italian "soffrito" ... not to take anyway from it, quite the contrary, just saying that that is the base of pretty much all red sauces in Italian dishes... a very good base that can serve for many things. I mean you just need that, add a bottle of tomato sauce with a little water so it can cook longer, let it reduce, add a can of tuna, and you have the perfect basic sauce for your pasta.

DANGER WARNING - Be careful blending hot liquids! If you don't do it right they will explode out the top of the blender and burn you. Either wait for it to cool, or if you have to blend it hot then take the plug out of the lid and cover 3/4 of the hole with a towel and then very briefly blend on the slowest setting for as short as time as humanly possible - ie 1/4 a second... then do it again for a bit longer then you should be ok to run it on the lowest setting and step the speed up gradually to high.
+Claudia Choi Hi....sorry..this comment is rather late..I make tom.soup regularly...no need to use celery or carrot ! I also use vegetable stock 'cos I am a veggie. Toms..garlic...basil..pepper..veg.stock..little bit of olive oil to lightly fry the garlic.If you eat cheese...a crumble of blue cheese tops the final dish off nicely.Enjoy.
Do u understand how much sodium goes in that soup? Healthiest choice is to boil tomatoes, peel them, separate seeds and then grind tomatoes into a paste, boil them good, add olive oil, salt/pepper to taste, little bit sugar if necessary and here is your healthy Tomato soup ready! Enjoy with croutons

Bibi Landin Sorry mate. Unless you are going to use heaps of tomatoes, like heaps, I think youll need to have some stock to make it into a nice runny soup.

that's definitely not a Canadian accent unless he has imigrated to Canada, sounds Australian to me.
If you steam and peel the fresh tomatoes cut them across the equator you can squeeze the seeds out makes for a better presentation. No seeds in soup.
