    I just flew to Boston and made the drive to Stowe, VT to attend the Alchemist 20th Anniversary party.
    I love that this man and his dream are still going strong 🍻

      @@ChopAndBrew thanks for the video. I saw John Kimmich in the parking lot at opening of their first day of their anniversary celebration.
      I had a little beer geek moment, and wanted to approach him for a picture, but decided not to bother him.
      It was very interesting hearing him explain the history of The Alchemist in this video. 🍻

    AWESOME! this video changed the way i think about my brew days! no disrespect to all of the Chop and Brew videos and Brewingtv videos that helped me get a start to all grain brewing and advance into making awesome beer... thanks for posting this Chip as i doubt i will get to sample Heady Topper anytime soon down here in Perth, Western Australia!!

    Neat.
    I grew up with California Cooler in the early 80's.
    Mike Crete and Stuart B. did a great job of making many wine coolers that even Gallo today with B&J they still make a standard with unknown competition.
    Study the fermentation process you will prosper. :-)

    I am big on recycling and had to laugh and agree maybe it will take harsher language to get people to recycle, although many recycle cans because they get money from the aluminum. I enjoyed this video very much, GREAT information as well as being entertaining! I found a local craft brewery near me because of my recycling advocacy. I attended a "How to Make Home Brew" at my local food cooperative in 2011 where I was introduced as the bag lady because I make totes from coffee bags and feed bags. The brewmaster asked me if I could make totes from their grain bags. I said I would try and that launched me into a wonderful relationship with the local brewery because the owners of the brewery are members of the brew club and they saw the totes and asked me to design totes for their growlers. I been making totes for their gift shop ever since!

    Amazing video. Thanks for sharing. I still don't understand what he means at 01:03:06 . Oversparging does produce astrungency but does John sparge or not.? He says dont sparge over 2-3 Plato but then he says he sparges 4-6 but a smal beer is left in the mash tun. I'm quite confused

      I believe he is saying they sparge but stop the runoff at a much higher gravity than other breweries might to ensure they don't get to that diluted and possibly tannic state. He says you could practically make another small beer with the sugar they sacrifice by cutting off the sparge early.
      Does this help?

      Many labs have an equivalent strain now. Imperial Barbarian and Omega British Ale V are the first two that come to mind. I think White Labs calls it London Fog?
