Marrowfat peas are bought dried and soaked overnight then boiled up I like to boil mine in ham stock in Scotland they're not made mushy Served with malt vinegar in a cup it's called a dig deep
My late mum never liked English fish and chips, she would always complain about too much batter on the fish. She would peel off the batter and just eat the fish. She would then tell me about the time she worked in a Glasgow fish and chip shop and how they would always tap the fish off the sides to remove excess batter before frying, leaving a nice thin coat that didn’t absorb as much grease and therefore was much more crispy and digestible. Cannae beat Scottish fish and chips. I think it's got a lot to with Italian immigrants opening up chippys in Scotland in the 20s and 30s . We all know about how deeply Italian tradition is steeped in believing passionately about providing quality affordable food . I can't think of a badly run Italian family run chippy, every one I've ever been in has been excellent . They set the standard here in my opinion. Even the Broons and Oor Wullie have Toni's Italian chip shop ,they're ubiquitous in Scotland and I for one am very glad they are Forza Italia.

Growing up in Malaysia, fish and chips was made with the bland old John Dory fish, I didn’t even know you could request other fish until I went to the English style fish and chips shops in Australia and New Zealand. Perch, Haddock, cod, hake, barramundi, squid, prawns, scallop, even oysters (might be a Scottish thing) were available. The variety and tastes were insane! I remember getting the barramundi on the Great Ocean Road winding away from Melbourne.. incredible views to go with the incredible food.

Me and my dad used to go to a little fish and chip shop in keighley, just near the train station, the haddock ws absolutely awesome, one day my dad ate 7 fried haddock, no joke, this was over 30 years ago, I’m from the north east and we used to go to the dirty valley railway multiple times year in year out, and also ate tons of curries in Bradford too.

I would agree with you 99% as that is my old stomping ground but: I found one in Ilkley that made a potato and fish scallop. Basically it was two slices of potato, fish in the middle, battered and then placed in a bap. OMG delicious 😂😂
The only thing missing was the scratchings, the odd bits of batter left in the hot cabinet. If you couldn't afford the fish, chips, curry sauce and scratchings were the next best thing.😊
I am watching Vera TV series , and I can't stop thinking of fish and chips , because she was in a fish chip shop and eating chips, I remember always going into a fish and chips shop for lunch or takeaway to eat at home ,when I had football for the school with bread and butter.and haven't been in one for a long time

If you want the best fish and chips in the UK i live 2 minutes away from the chippy that wins the best fish and chips in the UK award every year its in anstruther fife Scotland the chippy is right on the harbour so you won't find fresher fish anywhere plus the farm that produces the rest of the products is basically 5 minutes away too the only thing is they charge you like its a Mitchelin star restraunt but I must admit its worth it plus if you want something sweet afterwards there is an ice cream shop right next door or there is another restraunt called the ox and anchor its basically an American style place great steaks burgers and ribs also produced locally you won't have enough space in your stomach to try everything that looks good 😂
