You’re correct in cutting it out of the ground. The more mycelium you leave behind the healthier it will remain and you can find chanterelles in the same exact spot year after year as long as the mycelium stays happy. I’m also near Tampa too
man i was so surprised. i am only here in florida as a tourist (from europe) and i found chanterelles today! I then searched on youtube for videos and saw your video! Where I come from the chanterelles are hard to find. So this find in Florida is my first! Absolutely crazy! I love Florida! PS: Cutting or turning out makes no difference since the mushroom is only the fruit and the actual mushroom is underneath. It is only important to cover the spot again with the leaves.
I have those in my yard and the squirrels get them,at first i thought it had a piece of cheese, they also leave the roots, but the squirrels get them before me every time.
Those are my favorite mushrooms. Also after being very adamant about not disturbing the mycelium it turns out I've been wrong my whole life. A mycologist explained it very simply to me. When you break or cut the mycelium it goes oh I'm the start of this and must get as big as possible.

That's awesome that you found some. We've been getting a ton of rain and i need to get back out and so some foraging.
