One thing you can do with the empty rooms and odd space in the castle is male them linen closets, housekeeping, supply storage, you could even turn them into secret passages to wildly different parts of the castle or other such things! You could add things that are not necessarily canon but make sense in the universe, like a club room or whatever, this way you can use everything of the space!
