Smoked Pulled Pork Hocks Recipe

  • Cheap, easy, quick and super tasty! In this video i'm going to show you a smoked pulled pork hocks recipe!
    Pork butts, pork scotch and pork shoulders in general are getting quite expensive, however pork hocks are still super cheap!
    I remember when butchers used to give pork hocks away, now they are around $5-$10 per kg. Which is around half the price per kg you'll be paying compared to other suitable pulled pork cuts.
    The downside to using pork hocks is obviously you're paying for bone and they'll most likely have the skin on too. However with the right preparation, pork hocks produce some great pulled pork and they are a quick cook compared to using other cuts for pulled pork too!

    If you don't have a pellet smoker but you have a Weber kettle and want to follow along, you can use the snake method!     For these pork hocks, I trimmed them, seasoned them, got my pellet smoker running at around 275F/135c using Pecan pellets and then put my pork hocks in.
    I let them go for around 2.5 hours until they had developed a nice colour and the rub had set on the meat nicely, the internal temperature at this stage was around 185F/85c.
    They then went into a foil tray with around 500ml of chicken stock, 1/4 cup of brown sugar and around 6tbs of butter, I then covered the tray in foil and they went back into the pellet smoker.
    An hour later they were probing very tender at an internal temperature of around 210F/99c, then I took them out, let them steam off to stop the cooking process, let them rest and then pulled them apart.
    These pork hocks made for some delicious pulled pork!
    I then used the smoked pulled pork to make some pulled pork sandwiches!

    Excellent for when someone doesn't want to splash out on a pork butt . I'm going to see what a supermarket pork shoulder is like when pulled , only cost £10

      I've got some from Gewirahaus (sp). It's magnificent. I mainly use it for seasoning meats to cook on the gasser. The beauty of it is it mix it with plain salt to be as smoky or just a hint as you like. And not that fake smoke flavour either. Would recommend to anyone! cheers.

      Just the gardening gloves from Bunnings. Cyclone brand I believe. Temp probe is the IHT 1P inkbird.

    After you airfry your pork rind deep fry it and they'll double in size and be lighter

      Best way is to remove as much fat off it, then simmer in salty water for a couple of minutes , then airfry and finally deep fry. But in small pieces because they do expand, long process I know.... but the end result 😋

    My biggest problem with pulled pork is the amount of meat for two people. If I could find these this would be better.

      I cryovac and freeze left overs in meal size portions.. a 4kg pork butt will make 5-7 meals
