Very informative. Thank you. I have not experienced the e-7000. However I have ridden over 1000 miles on the e-8000 on all different types of terrain. In my experience the Boost power option is rarely used.........particularly for rocky technical climbing. I keep Trail on high (Boost on low) and utilize the appropriate gear setting (1x11) . I find, like you mentioned, that when in Boost mode it is harder to control the bike in these conditions. The Trail mode allows me better control while providing adequate power.
Shimano should increase the assist level in the E7000 motor, right now max assist is at 238% should be at 280% or 300%. The E8000 is 300% max and the EP8 is 400%, so Shimano should increase the E7000 assist.
I could not see myself using the Boost mode on technical trails. Eco and trail- definitely though I usually use Eco to feel more like I am riding a regular bike. I still have my regular bike. I think Boost could be dangerous on a technical trail and you certainly could not use it on tight switchbacks. I use it when on the road or pavement section to get somewhere.

The Shimano 8000 is a great motor but since assist is off on really slow pedaling, you have to be careful in that scenario around those switchbacks.

You are the only source, I could find, that does honest comparisons between different motors in ebikes and thorough reviews. Most material that is out there is basically marketing gibberish and unless someone has opportunity to test all ebikes by himself is hard to make informative decision and producers are not helpful at all in their bikes descriptions. Maybe low assistance equals high longevity. EP8 is trash.
I have two eMTBs one is an E7000 the other ones in EP8, they both work great no issues with ether motor. I am intrested in try the new EP6
