@@Macaco42_1The most important thing in a hitless/deathless run isnt raw skill, but knowledge and routing, if you lay out a game plan beforehand, you can trivialise most encounters, if not outright script them. Elden Ring actually only reinforced this because the world is so open unlike some other souls games, you can take all the time in the world to get upgrades, buffs, and gear before actually fighting anything. It will still take practice without a doubt, but hitless sounds a lot more intimidating than it is in reality.
6:13 Its not really "Input" reading, its an animation read. They notice whenever you use a consumable like the flask, and will throw something, but its literally any consumable. Like you can just throw a dagger at say the Godskin Nobles and they will fireball you like they would if you healed.

While input reads on healing have been in the games for a very long time (possibly since Demon Souls), it has become extremely blatant and obvious when you look at Elden Ring.

If there are obstacles in the Arena (godskin duo) heal behind those, Use a spot where you would normally punish an attack to heal instead, you can also just make so much distance that no matter what they do it'll either whiff or not hit you in time. This is such a non-issue no matter how fast the read is.

Even knowing to run away breaks the pace of a fight by having to run a marathon to be able to heal, and that also means that their poise will regenerate in that time. I wish that the input reading was executed more like Genichiro's bow in Sekiro, where if you used an item, he would instantly pull out his bow, but you would always have enough time to deal with the incoming attack instead of just eating unavoidable damage. Elden Ring has instances of it too, like when you heal in Malenia's second phase and she jumps up in the air to come down for a lunge, I personally find that much less frustrating and more engaging. If only her first phase input read on healing wasn't unavoidable damage if it triggered. Her first phase in general is annoying due to how passive she is.
