Tangri Kabab Written Recipe With Directions
Ingredients:
-Chicken drumsticks 800 g
-Green chillies (hari mirch) 7-8 small size
-Garlic (lehsan) cloves 7
-Ginger (Adrak) 1 inch
-Lemon (nimbu) juice 2
-Vinegar (Sirka) 2 tbs
-Fresh coriander (dhania) 1 tbs
-Salt (namak) 1 tsp
-Yogurt (Dahi) 100 g
-Cooking oil 3 tbs
-Coal (koila)
-Cloves (laung) 4-5
-Black cardamom (badi elaichi) 3
-Mace Flower (javitri k phool) 2
-Cloves (laung) 7-8
-Black peppercorns (sabut kali mirch) 1 tsp
-Yogurt (Dahi) 100 g
-Tetra pack cream 100 ml
-Turmeric (haldi) powder ¼ tsp
-Dried fenugreek leaves (kasuri methi) ½ tsp
-Cumin seeds (Zeera) powder ½ tsp
-White pepper (safiad mirch) powder ½ tsp
-Green cardamom (sabz elaichi) powder ½ tsp
-Salt (namak) ½ tsp or to taste
-Roasted chickpea flour (Bhunay channay ka atta) 2 tbs
Directions:
-Remove the tendons of chicken drumsticks and make deep cuts with the help of a knife.
-In a blender, add green chilies, garlic cloves, ginger, lemon juice, vinegar, fresh coriander, and salt. Blend well and make a paste.
-In a bowl, add chicken drumsticks, prepared paste, and yogurt. Mix well, cover, and marinate it for 2 hours in the refrigerator.
-In a pan, add cooking oil and drumsticks with marination. Cook it on a medium flame for 15 mins until it tendered, and turn sides in between.
-For koala dum, take a small bowl in the pan. Heat a piece of coal and place the burning coal and cloves in a bowl. Drop a few drops of oil on the coal, cover it, and let it cool.
-In a spice mixer, add black cardamom, mace flower, cloves, and black peppercorns. Grind well and make a powder.
-In a bowl, add yogurt, tetra pack cream, prepared spices powder, turmeric powder, dried fenugreek leaves, cumin seeds powder, white pepper powder, green cardamom powder, salt, and roasted chickpea flour. Mix well.
-Add cooked chicken drumsticks (set aside the leftover sauce for later use), coat well, and marinate for 1 hour.
-Add drumsticks to seekh, place it on the stand, and fire roast on direct flame for 3-4 mins until it's charred from all sides.
-Serve and enjoy with sauce or ketchup.
