I love these videos. No talking, music or other distractions. Just the basic machines.
The kitchen is lovely and clean, everyone knows what they're doing, they're efficient and very good at what they do. I also love that they don't waste the product at any stage. All the bowls are scraped clean and everything is weighed. The chefs also use ergonomic movements and don't overstretch or use superfluous movements.
This kitchen and staff is so clean and organized that it's almost ironic that they are making a "FUN" cake.

All I would do is make mess. I'm so impressed by how skilled each worker is.
working in a repetitive job like this you get REALLY good (and fast) muscle memory. The more you do it the less mess it gets every time till eventually you don't make any mess.

There was a whole lot more than just eggs and flour in there. High fructose corn syrup, a massive amount of gelatin and a lot more. I would classify this as Junk food more than Healthy food.

Cleanest kitchen and techniques yet! I especially appreciate how they have a cart on wheels for the large mixing bowls. In so many other videos, we see people plop the bowls on the dirty floor, drag them on it, then pick them up and place them on the same table they are making the food on YUCK! This kitchen is so clean and they have a beautiful product!
I'm glad you mentioned the cart wheels. It also bothered me.

제안 하나 해보면...
저렇게 하나하나 트레이에 색칠해서 얇은 시트 하나로 롤케이크 하나 만드는거 보다
깊이가 훨씬 깊은 트레이에, 트레이 높이랑 같은 높이의 사선 칸막이가 탈부착 가능한 트레이를 아예 만들면 훨씬 일이 효율적일듯 합니다!
사선 칸막이로 구분된 공간에 지금처럼 색색이 컬러를 채우고, 마지막에 한꺼번에 칸막이를 뺀다음 구우면 현재 결과물이랑 똑같은데 다만 높이가 더 높은 빵 덩어리가 만들어지고 그거를 기계로 횡단면 절단하면 한번에 여러개의 시트를 만들수 있을거 같아요.
앞에 레인보우 케이크 만드는 영상 보고 왔는데 거기서 그 기계를 쓰더라고요. 넣으면 가로로 절단해줘서 두꺼운 빵을 여러개의 얇은 시트로 만들어주는..
혹시 설명이 좀 어려울까요
색이 섞이지 않을까요?
그렇게 만들면 시트가 약해서 손상될 우려가 클걸요? 또 자른 단면이다 보니 크림 바르고 나면 수분흡수가 빨라져서 식감 변질도 쉽게 될 것이고,,

The amount of sugar, oil, and cream scared me until I realized just how much batter was made 😅 impressive to see such bulk quantities made, especially in short periods of time

very strange that all the difficult parts of the baking are done purely by hand then the easiest part at the end, cutting it, is done by this giant machine that looks massively over-engineered and like it could cut through diamonds if it had to.

In general the more incredible food looks the more bland the taste. I saw them throw some white chocolate into the cream mixture but apart form that, this cake was just basic sponge and cream.
@@davefish2280 if you saw the clear corn syrup they poured in both the batter & cream. I also think the liquid they squirted on the cakes after baking was prob diluted syrup, so it was prob pretty sweet!

@@davefish2280 Even just “basic” sponge and cream is delicious though! That said, in addition to the white chocolate, it seems they also added a flavored syrup on the cakes. Regardless, they look delicious to me, even without the addition of syrup.
Everyone's talking about how clean it was but the muscle memory of flopping cake batter into and out of bowls like that and into piping bags etc is so quickly learned in bakeries. I nailed it after about 3m when i worked in a grocery store bakery. Yeah its messy the first few months while you're learning, but bakery work is all about repetitive motion and once your body has learned the patterns nothing changes so its pretty set in. Those ovens tho- ovens are evil machines, no matter how long you work with them, they'll still find a way to burn you when you least expect it.

I second this completely! Even though it's been years now since the grocery store where the bakery I worked at closed down, as soon as I begin decorating at home it's like no time has passed. I didn't have too much trouble with the ovens, but my main enemy was actually the Italian bread. The little peaks that form after the bread is scored can get so hard and sharp that one time as I put a loaf into the slicer with its dozen whirring blades of decimation it was the bread that drew blood! 🤣

As I watch the videos of amazing food items being made in Korea, I continue to be amazed at how labor-intensive everything they make is. There are no shortcuts. Every step they take is meticulous and calculated. Everything is made from scratch, not even the yeast is pre-proportioned. At 17:42 of the video I counted at least 28 roll rainbow cakes on the trolley. I cannot imagine how long it took those four or five bakers to accomplish that...

Fascinating! As a 'casual' baker, and someone who has read a lot about industrial food, my only regret is that there was no clear identification of many ingredients used. Quite a few were fairly obvious, others not so much. Oh well, maybe it's just as well ;-)

you can tell who has been there for years. Its precise and clean but still very fast. I saw one of them mess up and added more to cover it up but the one they keep showing throughout (I think its the same one) was satisfying to watch because of he/she precision

So fun to watch those being made! I love to go to our local Korean grocery store and pick up those cake rolls. Our favorite is the matcha. They are so yummy!! I've never seen the rainbow one before though!

What we call street food and what they call street food are two different things. I think that they make these in the factory and then someone sells them on the street. If that is the case then it can be called Street Food.
