Florence, well, thank you very much for the kind words... but also, let me add a bit to this. Its really important to me to show how 'Paradise' like this really can be closer at hand than we think! I make sure to specifically visit tiny towns like this, places that honestly, I can't imagine anything but the tiniest percentage of 'tourists' have ever visited... and I try to show how really any place on earth can be a 'Paradise' to someone. I do love Thailand, and I am ever grateful (and Im happy that youre watching, and learning!!) but really, fun trips can be had just outside our front door, no matter where we live. This noodle shop is actually one long bicycle ride from my own front door, but I never would have found it, if I didn't choose to take that small side road, the road less traveled...

I have learned at an early age I guess (thanks mostly to my parents!) that I don't need a car, a high-paying job, or even a house of my own, but that the best things in life are relationships, and a willingness to live in the present each day.

Yes they are, and continue to be... ah its such a blessing. I just can but can't believe it sometimes, like really we could just have been such a joke, literally two lost foreigners, funny looking on funny bicycles, but instead the locals around even gave up THEIR right to eat first, and they didnt even know us!! Now thats LOVE, now thats hospitality, now thats just treatment of others that (if you watch TV and the news!) that 'seems' to be lacking in the world... but yet, on the ground, theres TONS of beautiful situations like this happening every day!

Couldn't agree more x-crisis, this is literally the thing that drives me to explore, opening ourselves to the kindness of others really to me seems to be THE way forward for the world, right now more than ever. We have each become slightly lost I think, the media is just too successful at times to make us think the wide world is somehow a scary place... and I am volunteering myself as a soldier in this fight!! But thankfully, its a fight with love as the only weapon!

So now I fully understand Khanom Jeen... After watching Mark for several years I always wondered how they ferment the noodles. In fact, after watching the process here I can see that it is similar to a Sour Dough started, flower and water that has been left to ferment, activating the natural yeast bacteria found in flower. This is super interesting and a great insight into daily life. Thank you for sharing this!

Well this Video is impressive! I love a video starting off with a cup of Coffee. lol. Wow to see the coffee shops there and other shops its amazing. what a view! So now I fully understand Khanom Jeen... After watching Mark for several years I always wondered how they ferment the noodles. In fact, after watching the process here I can see that it is similar to a Sour Dough started, flower and water that has been left to ferment, activating the natural yeast bacteria found in flower. This is super interesting and a great insight into daily life. Thank you for sharing this!
