Kryssie, so glad to hear you're going to start dehydrating soon! Most things you dehydrate shrink down considerably, but carrots are almost magical in terms of how much they shrink down. Rehydrating them is fun, because the plump up almost before your eyes. Reminds me of those toys we had as kids that you put into water and they grew. Maybe that's why I have so much fun with these, lol.
I have dehydrator on my Amazon wish list.. hope next month I can get it.. I think it's either similar or same as your dehydrator.. But love the lessons. One thing a thought as you were talking is that even if it's hard to have all peices the same size because of nature of carrots.. but what about putting larger rounds on one tray.. small rounds on another tray? Just curious. I'm honestly shocked how well they shrank down.
I hope you get your dehydrator! I love mine. In fact, I now have 3. So stay tuned for more videos. :) Interesting thought about putting the smaller pieces on one tray and larger on another. That might be worth trying! Also, you can remove pieces as they dry so that you naturally end up with the small ones removed first. In this case, they were already done by the time that I got up so I didn't need to do that, but it can definitely be done. And I'm with you. It's shocking how much they shrink down. I love it. The funny thing is, they will plump up and no one will know they were dehydrated.
To have more uniform pieces, cut large carrots in sections. Then cut the largest ones in half and/or quarters lengthwise. Then slice. Many times the large ends of large carrots are too large to be considered bite size pieces. Personally I don't like to have to break or cut pieces of carrot apart in soups, salads or steamed dishes.
Yes! For soups, I don't bother rehydrating as a separate step. Just toss them in with the other vegetables and they will rehydrate as you cook the soup. These work great in soup!

I'm not sure whether or not that impacted the nutritional aspect of them. Also, since I almost always use my dehydrated carrots in soups (where they simmer for a pretty long time), I can't really say whether or not the lack of blanching impacted rehydration. But if nothing else, they didn't look as appetizing. So now carrots are one of the things that I blanch, since the quality of the unblanched ones didn't seem to be as good.

I think you'll love them. I love how much they shrink up, because you can store so much in a quart jar.
Do you ever buy from the frozen section? I would assume that those would not have to be blanched??
I do buy from the frozen section, and those don't have to be blanched. Dehydrating frozen vegetables is super easy!
