A lot of people are saying the link to the recipe doesn’t work anymore; so after 6 years- I’m adding it here: Heather’s Schweaty Balls 2 lbs Ground Round 1 Freshly chopped onion 1/2 cup Milk 2 eggs 1-1/2 c bread crumbs (at least- add more if needed) 1 tsp each black pepper, salt, sweet basil, onion powder, oregano, garlic, 1 TBS Parsley Mix well with mixer or super clean hands. Cook in Preheated 375 oven for about 40-45 minutes or until golden brown or pan fry. Add to pasta sauce for meatball subs or add to gravy for Swedish type meatballs.
Man does these look good!!!! I love the drums in the background!!! I'm a widow and miss the house being noisy. I do keep my grands a couple days a week. It really gets quiet here. I have found the perfect solution, watch your videos. Your sweet chatter and personality is such a salve to my heart. Hearing the drums brings back great memories. My Daughter played drums and was the bass drummer in her high school marching band. Only girl on the drum line and 5 foot tall played the largest bass drum! Good memories. Love your videos.
I love to see different meatball recipes. Yours is very similar to mine. My kids didn't care for the onions either, so I would grate them finely. Really helped! Kids never noticed. Continued prayers for healing and strength
I love making meatballs. I can mine so I always have a batch ready. I live in the South where we have a lot of hurricanes and so I keep food canned for when the power is out. It's easy to heat these up in a pot over a grill and have meatball sandwiches by candle lite or lantern light. Love your videos. I'm seventy and I'm always trying new recipes. Thanks for sharing.
Pat meat into a rectangle on the counter, gently cut into squares the size you would like from end to end and side to side. This gives you evenly sized meat balls by removing the guess work...I like to make them for the freezer and have plenty for the subs and also sweet and sour meatballs over rice with bell peppers and onions...Yum! I am in my early sixties and like my own cooking way to much. So proud to see a young person taking care of her family this way....

I add a little sugar too tomato sauce of any kind like tomato juice. That cuts the acid in the tomato. My Dad got headaches also and that solved the problem for him. Not saying this will help everyone. Just mine with my dad. Heather love your recipes and i will try too make a lot of them. I always make meat loaf in 1/2-1 cup size. There's only 2 of us now so that's a good size. When our youngest granddaughter was about 3, we kept her for a wk. I served the mini meat loaves for dinner one evening. She immediately said "Daddy's meatballs." I hadn't thought of that before. From then on, I include 2 in the sauce when we have spaghetti. Kids say the darnedest things is right ... & we can learn from them.

Heather, you and your family just warm my heart. I will have to try baking meatballs. Sounds yummy! I have always made my mix basically like yours; I use fresh bread moistened w milk as it wicks the grease from the ball while cooking and I add dry Parmesan cheese in the mix. My difference is that I boil the balls in salted water to 3/4 done (about 5 minutes - they float) and then add them to the sauce to simmer and absorb sauce inside them. There is hardly any fat this way. To make a really smooth ball on the outside I roll them w oiled hands. Of course, this is may be best w a sauce, but I hear some people fry theirs after boiling so they are juicy and less greasy, but still have that caramelized flavor. All in all, LOVE your videos! Reading the comments here has given me a new love for wanting to make meatballs! Imagine delicate chicken meatballs boiled in chicken stock and then simmered in a cream sauce, a mushroom cream sauce mmmm. I also love fish balls in a light cheese cream sauce with cheese-its crumbled over and baked, then served with toast MMMMM. Okay, its more balls for me!
These meatballs look great. I have heard that a good way to disguise onions and other veggies from children is to grate them finer. Would work here or meatloaf, etc.
For those who have kids who hate onions, I use to grate the onions to 'hide' the onions in meatloaf, casseroles, ect. As long as my kids didn't see onions, they would eat it.

Looks great! Another way to get around the onion thing is to grate them in so that you get the flavor but not the texture of the onion, which is often what people do not like about onions. :)

After having tangled with hugely over onion meatloaf a time or two (mother's), I found one that calls for none at all....and is cooked in a mushroom soup gravy. Holds together for slicing perfectly.

LOL and he was making his own video..... he has a you tube channel where he shares a lot of his music covers. He has been playing drums since 3rd grade. He is a senior this year and is in a band. He plays guitar too..... a new amp arrived at my house yesterday. I need better earplugs. HAHAHA

I bake mine on a jelly roll pan that is lined with parchement paper. The paper absorbs some of the fat but the biggest advantage is you roll up the paper and your pan is very easy to clean. The greased paper would make one heck of a fire starter if needed. L:iked the video.

oh i dont think so? no one would buy them if they were that limited. LOL i have read they will crack if you put them on a cold counter when they're hot, but no one should do that anyway. I do believe they are safe to either 450-500 in a standard, kitchen oven used in homes. :) the ones i have in this video i got before i was married the first time, back in 1994! HAHAHA I use the crap out of them, usually use them at 400! LOL
YEP! if i make it into a meat sauce, I pressure can it 60 min pints and 70 min quarts.... if i make it plain, its 20 min for pints 25 min for quarts. I pressure can my plain, i know some people water bath can their sauce, but i feel safer with the pressure canner. Just can up the leftovers right after dinner! Last time I made meat sauce, I got 3 pints to put into my pantry! :D

I'm going to have too try these, what I spend a month on meat balls is crazy. We eat them for lunch and sometimes dinner and even in our spaghetti. My first born will not eat red sauce at all unless it's pizza sauce.
You can make a triple batch of these and put them in ziplock baggies and freeze them! thats what i did when i was pregnant with each boy. i made 20lbs of them! LOL my mom helped me! then we would freeze them, so all i had to do was pop them out of the back and reheat them up. made that postpartum time so easy!
The Kneady Homesteader i made these tonight and added some Italian seasoning.. i lightly seasoned these cause im not a huge season person but I totally should have added heavier seasoning.. they do taste really good though and in my sauce they will be great. Im going to make the Italian bread next! Thank you so much.

Sounds good but I will replace the onions with possibly chopped mushrooms as I am allergic to onions. I bake my meatballs also but on a broiler rack covered in foil so the grease drains away.
My in-laws Hate onions like if they even know its in there they won't taste it kinda hate it ....I hate cooking with out them ...I've been blending onions for years ...they have no clue ....I've never done it in burgers or meatloaf but always in soups ,stews and pasta dishes ect I also learned a tip from a friend for uniformed meatball size ...grab a handfull of the meat and squeeze it and the meat squeezes out between your pointer finger and thumb ....I subbed today love you recipes
Unless omitting the onions are due to allergies, you and grate, shred, pulverize or puree them and add to meatballs & meatloaves...you have the flavor & moisture and no one will see the onions..Viola ! Enjoy , Judy

I just use an ice cream scoop. I have different sizes of scoops so I can make different sizes of meatballs for different things.

I am making it tonight. I use Italian seasoning instead of the basil and oregano and I also add Parmesan cheese.
I use a cookie scoop for my meatballs - then they are all the same size in the oven (I don't even roll them - just scoop and into the pan)

I think that the recommended max temperature when using Pyrex glassware in the oven is 350 degrees?
