    Also Joe worked at Chinois on Main,in Santa Monica in the early 90's and Puck's cuisine was his favorite....

    add a few fresh pured scallops in your crab cake 'appareil'and use no flour........

    I thought the potatoes went in to make it silkier instead of the cream because Josiah said "people like to eat healthy"? But then he ads the cream anyway? What....!?

      +m00ncrossed Yep, did you see the amount of cream it was... close to nothing, always amaze me how cream and butter scare so much the americans when they don't care to eat on a regular diet deep fry proteins and sugar everything ... come on.
