    I used a potato peeler to peel the outside of my lemons giving me little strips without getting any of the pith which is bitter. Then I put all those peels into a mason jar and covered with vodka. I've had them soaking for two months and will soon strain the vodka out to be stored in smaller amber bottles for lemon extract. I'm so excited to use that for cooking and cookies and cakes. The juice I froze in ice cube trays then stuck into a plastic bag. I just need to take out a few for glasses of lemonade. I decided to not can since I know that destroys the Vitamin C and wanted to keep it. The freeze dryer is wonderful for that since it doesn't heat up the fruit. I covered all the peels and stuff left with filtered water and have stored it for cleaning purposes. This is my first year with a lemon tree and I'm so pleased with having this available for me.       Thats a great idea to use a potato peeler! I have never heard that canning takes out the vitamin c. Good to know! I might freeze some next time as well.

    Hello! I love your videos! You have such a calm demeanor and your videos are really informative. I started water bath canning 3 years ago and added pressure canning a year ago. You are way ahead of me, I’m 45 years old

      Thank you so much! That means a lot! The first few years I felt like I was really slow at canning. I would just do it here and there. I am a lot more serious about it now. What has been your favorite thing to can so far?

      @@trinity.linton my favorite thing to can is broth. It saves so much room in the freezer! But I think in general it’s gratifying to can things that I’ve grown myself. Learning the pressure canner was definitely scary at first and a big learning curve but I’m glad I just started and figured it out as I went. My birthday was yesterday and my husband surprised me with the 12qt electric canner. I’m so excited to try it out!

    Great video. You can make Hydroxychloroquine from the peels if you also get 3 pink grapefruit peels. That is used for the common cold. 3 peels from each fruit (lemons & pink grapefruit) - put peels in a pot and cover them with water (just to depth of peels). Cover, and bring to boil, then simmer for 3 hours, then shut off and let cool naturally. DO NOT open the lid during the process because the nutrients from the steam drop back into the water. Once completely cool, I strain the liquid out and put it in ice cube trays. Typically, one ice cube is all you need in a hot toddy. For a hot toddy, fill a coffee cup to 2/3 full, then add either the frozen Hydroxy or a tsp of plain lemon juice, honey, and alcohol (optional). My mother gave us this when we had a cold and it has never failed us. And she put brandy in it as well, which helped us sleep great and the flavor was nice. The alcohol is such a small amount it never hurt us. Not much different I guess than any cold medicine at the pharmacy - most have alcohol. Sorry for such a long message.

    Lemons!! You totally scored! I love lemons!! Last year we threw a 70th birthday party and the theme was lemons... I was lucky enough to have a friend with a HUGE tree and we picked over 200 lemons. it was GLORIOUS! Afterwards we zested half of them (lemon zest freezes beautifully) and juiced the rest. My freezer is still loaded, but it's been great to have juice and zest on hand.

    It never occurred to me that you could can lemon juice! I just bought some bulk lemons at a great price, juiced them and am storing the juice in jars in the freezer. Now that I know I can can it I will be able to free up some freezer space! Thanks Trinity! I have zested my lemons and have made limoncello and lemon extract for baking.

    Meyer lemon juice is soooo pretty! They are crossed with a sour orange if I remember correctly. which gives them such a beautiful color!

    Infuse vinegar for cleaning or cooking, make vinegar, candied peels, dry and powder Zest, freeze zest.
