    I used to live in TN, but now back in the UK. To see your videos and hear you talk brings back great memories of such a great time there. The southern way of life is laid back and real good and folks are kind, I have been in NC and love the place, keep up the good work Meridith and you live your life as best for your beautiful family , best wishes from me !!

    Dang, chicken and dumplings sure sounds great!!! I guess I know now what's for supper Saturday! Quick Tip: To thicken your gravy real quick, 1 cup cool water and 2 tablespoons of corn starch, stir in cup throughly and pour into pot. A couple of minutes stirring and the gravy will thicken. I cannot make this meal without thinking about Mom!!
    Your daughter is funny as a whip. "It's to salty," and a that big ol'smile as she looks for a reaction! That's some good ol' family humor. lol

    We say CRAH-PIE in East Texas and most everywhere else here in Texas. You should say it the way you always say it, because that's who you are. I've watched all your videos and my wife says I'm obsessed with you. No- well, you are quite easy on the eyes-but I just like to hear how you guys do things. Everybody is different. I admire your desire to step out and put yourself out there. And you are such a good role model for other women and young families. I hope your's is the kind of families that is the backbone of America, but I'm afraid that is not the case . But your children are blessed to live in such a great home. You may think you don't have much, but believe me your kids will look back someday and remember what a wonderful experience they had as children. Keep up the good work.

    Hi Meredith I am going to try your potatoes. My mother used a quarter inch of water and quieter inch vinegar in the pan which was burnt make sure you let it boil for 4 minutes dump the vinegar in the sink use a little soap and water all clean going to make your potatoes tonight thank you.

    Growing up, when we would visit my mother's sister in rural Arkansas, she would make me chicken and dumplin's from scratch. It was so good! Sometimes she would substitute chicken with squirrel. A little black pepper goes well with the dumplings.

    we just call them white perch down her in southern Louisiana...also we call them chicken and dumpling to :) ..i make my on dumpling using Bisquick...i use chicken broth instead of water to make my dumpling..oooo they so good....

    Olive oil or canola oil is what I season cast iron with. I clean mine with salt as well! Cast iron is basically all I cook with anymore! They do require some maintenance though but well worth it! They do bring out the flavor in food!

    I'm a new subscriber and I love watching your program. I tried your mashed taters and we loved it, definitely doing that again! Also, I have always used course kosher salt to clean my ironware but after seeing your method I ordered me a ringer and now I use the ringer with the salt for cleaning, it does an awesome job.     Those steaks looked perfect to me as i fix them fast and hot so that they are still pink inside but i use very little oil and a couple pats of Butter at the very end and i'm so jealous of the Farmer as he is one lucky man to have such a pretty wife that is a great cook as well and that is very rare in this fast food packaged world we live in today

    No Piggley Wiggley here in Eden,NC.Just a lot of Food Lions.Gramps was right about corn bread-buttermilk.
    My mother fried corn bread in cast iron skillet about 3-4 in round pieces.Break up and then you put in buttermik.
    Keep adding dashes of salt as you eat with spoon.Our mud in Eden will be frozen added with inches of sleet and freezing rain
    this weekend.Most rain here in a year and I was 64 News Year day 2019, so I been thru a few.Ole man winter is starting to make come back.Accent-Accent.You got a true NC voice going on.Be proud of being a Tar Heel. Great videos!

    Thank god for the gas man to cook all the wonderful food 🥘. The wind was ridiculous. Even in the valley. You could hear it screaming over the higher elevations. Dry mud is a good thing. 👍🏻👍🏻. God bless you and your family. Great video

    That chicken and dumplings looked good my mom and granny used to make their dumplings with bisquick biscuit mix fix it like you are making biscuits and just drop tablespoon sized balls of it in your boiling chicken juice they called them drop dumplins

    Mrs. Bernard you are so spot on in all you do. If you get a chance may you could get some video of your husban getting the silage with your Bachoe . Very nice to see your family again.     Another great episode, chapter of your life, love steak, love smashed potatoes, love chicken and dumplings, although I've always seem it with peas and carrots, celery, everything you cooked looked so delicious, and of course you can't help but love those incredible sunsets, I don't know if you've ever heard the saying about the cloudy sky a mackeral sky will never leave you dry

    Are you suffering from cabin fever Meridith. Being stuck inside just puts me to sleep. My two youngest children now 24 and20 now used to sit in their highchair and num num num my chicken stew with plenty of vegetables and no store bought baby foods. I used chicken breast meat but wow it was worth it. Nice to hear your upbeat voice again so thanks for the blog from us in Aus.

    I use Anns dumplings they work well us to use canned biscuits an roll them out the are good also but that`s one of my favorite winter meals that an home made hamburger veg soup with every thing but the kitchen sink in it.Fry your hamburger out an use frozen mixed vegies an several small chopped onions an potatoes with home made corn bread hard to beat.

    I Add a stick of butter and a little milk and you can also cut the dough into 2” bite size pieces. Sometimes I put a can of cream of chicken soup also and it makes it a lot creamier . Not saying you need to change anything about your recipe. I was just sharing. 😀

    Hi miss.Meredith , new sub . From cen. Oregon , found your channel and just love it ! I was raised on a ranch in Texas were we had 350 Charolais cattle and all the farming fun that goes with it ! Lol . I lived there with my Grandparents and aunt and uncle it was such a wonderful time in my life . Now I'm a contractor but still raise a beef every year ! Can't beat home grown beef !     Lol love the work on the farm. And the way you explain everything. The chicken and pastry. The next time cooking it. Get the chicken thighs with the skin on the thighs. Get a big container of Swanson chicken broth. And boil your chicken in it. We use the same Anne's pastry. Thats as close to moma's and mother n laws rolled out pastry. Keep up the great videos

    Try it with buttermilk bisquits (from a can) ....cut each bisquit into 8ths and drop in boiling broth....

    In Louisiana and East Texas we call crappy Sac a Lait. Google it. My momma switched to using tore up flour tortillas for the dumplings. We never knew the difference.

    lol @ crappies.... which is the fish i love fishing for. but you can only eat so much of it because of harmful waters here in NE Ohio, big chicken eater here... in fact my grandmother made her money teaching restaurants her receipt and selling her chicken to bingo places she loved going to.

    Float a paper towel a few seconds it will absorb grease or put big spoon in freezer a few min. The grease will stick to it’s you skim the top.

    I made this last night but we add about 6 chopped hard boiled eggs and cream of chicken soup as well. It’s the only dish I can make that taste just like my Mommas. And only made with thighs......got to have the fat which means richness.

    Rub your salt in your skillet with a half of a potato, then rinse and dry with seasoned towel. Works great.

    Here in Ok. we call them crope. Good fish they have to be 15 in. long to keep them out of the lake and rivers to keep them. I like the ones that are about as long as my hand. Wish I had a pond with them in it. I'm like your husband I like my beef. When I was a boy it was my job to take care of the chicken didn't want to eat them I wanted the eggs they layed to eat.     Hello farm wife you just made my day great you know I think you should get your own Television show you would put the pioneer woman off the screen. And we always call it chicken and Dumplings don’t know why. Yeah my grandma would say ok boys I need a chicken chase was on. And love your plates we have some just exactly like them.     Never used propane always have used heating oil at night , woodstove during the day.. I think we all are going to have to grade and have rock hauled to our driveways this year.. Wind is helping but the damage is already done. Chicken & dumplings will make you feel bloated lol 😂.. But they good no doubt. We took 219 Hogs away from there last 9 days.. Not much to do this time of year , that's why I began trapping. It took the lull out of winter often called Seasonal Affected Disorder.. You wouldn't believe how many people have it and are unaware. Sunlight is important for us all , but getting outside even if it doesn't shine is just as important. Enjoy your mud , I meant week.😋

      Yes, damage definitely already done around here, too. Even frozen mud is not good. I know a lot of people have that disorder, probably unaware. Hope the weather doesn't get too bad this weekend. Take care

    I use Himalayan pink salt it got lots minerals ,it good for ya! Ya I drive truck and that Sun ! Man I think it greeting brighter than ever , just seambrightr anyway,
    My wife make chicken dumplings and make it with buttermilk and put batter on top stu and bake it in oven ,it real good ,I love your smile enthusiastic approach and yes maybe you would be good politian , one problem is your to honest lol ,

      I've never bought himalayan salt but I've heard of it. I'll have to try it! I also need to add butter and buttermilk to my stew, that makes everything better. :D Thanks for the kind words!

    My Grandmaw Hooks was a country cooking woman she could cook anything make the best clicking and dumplings she would buy a Hen that weighed about four pounds put it in the pressure cooker for about two hours get it done take off the heat and then roll out the dumplings on a pillowcase with flour sprinkled on it she made them the way you make buttermilk biscuits she would get her a roller pin and roll out them dumplings and get her chicken good and got and put her dumplings in one at a time cook for about ten minutes and that fat from that hen made them taste so good one if the best meals you ever ate
