    No one calls it "crap pie"! It is "crop pie"! You are close enough to the South to know it is "crop pie"! First time I have disagreed with you about anything. I almost feel bad. I binged watched your videos from the very beginning up to this one. I also recommended all my email friends do the same.

    I'm a new subscriber and I love watching your program. I tried your mashed taters and we loved it, definitely doing that again! Also, I have always used course kosher salt to clean my ironware but after seeing your method I ordered me a ringer and now I use the ringer with the salt for cleaning, it does an awesome job. Thank you for your programs!

    we just call them white perch down her in southern Louisiana...also we call them chicken and dumpling to :) ..i make my on dumpling using Bisquick...i use chicken broth instead of water to make my dumpling..oooo they so good....

    You gotta tell the farmer for me, "I AINT NEVER HEARD OF NO BEEF AND DUMPLINGS"! Lol
    My granny would roll over in her grave, if she knew you was making chicken and dumplings, with frozen dumplings!! I know that because she rolls over in her grave when I used some canned biscuit dough, to make my dumplings!! ;-) I just use a can of biscuits. Cut each one into three strips. I have also seen people cut them into smaller pieces, then roll into a little ball, then flatten a bit on a plate. Makes a little bite sized nugget of dumplings. But too much work for me. My granny would make up real homemade biscuit dough (even the buttermilk was homemade out of regular milk and some CLABBER GIRL, she set next to the wood stove to make)! Pilsbury (not paid for this advertisement) makes some of the best, for my taste!! Then a touch of corn starch and cold water, to thicken a bit, at the end!! Oh, I'm making myself hungry!!!
    As far as salt goes, I used to use quite a bit too. But I was showed that a little salt gives flavor, a lot of salt gives high blood pressure! So I just go with a little bit while cooking, and let the salt shaker sit on the table, so each person can adjust the amount of high blood pressure to suit their own tastes!! And the pepper shaker, OF COURSE!!
    Love the smashed tater idea!! Looks delish!! Maybe with a dollop of daisy sour cream, too! And some chives!!! YUM YUM!!

    Dang, chicken and dumplings sure sounds great!!! I guess I know now what's for supper Saturday! Quick Tip: To thicken your gravy real quick, 1 cup cool water and 2 tablespoons of corn starch, stir in cup throughly and pour into pot. A couple of minutes stirring and the gravy will thicken. I cannot make this meal without thinking about Mom!!
    Your daughter is funny as a whip. "It's to salty," and a that big ol'smile as she looks for a reaction! That's some good ol' family humor. lol

    We say CRAH-PIE in East Texas and most everywhere else here in Texas. You should say it the way you always say it, because that's who you are. I've watched all your videos and my wife says I'm obsessed with you. No- well, you are quite easy on the eyes-but I just like to hear how you guys do things. Everybody is different. I admire your desire to step out and put yourself out there. And you are such a good role model for other women and young families. I hope your's is the kind of families that is the backbone of America, but I'm afraid that is not the case . But your children are blessed to live in such a great home. You may think you don't have much, but believe me your kids will look back someday and remember what a wonderful experience they had as children. Keep up the good work.

    That chicken and dumplings looked good my mom and granny used to make their dumplings with bisquick biscuit mix fix it like you are making biscuits and just drop tablespoon sized balls of it in your boiling chicken juice they called them drop dumplins

    lol @ crappies.... which is the fish i love fishing for. but you can only eat so much of it because of harmful waters here in NE Ohio, big chicken eater here... in fact my grandmother made her money teaching restaurants her receipt and selling her chicken to bingo places she loved going to.

    Olive oil or canola oil is what I season cast iron with. I clean mine with salt as well! Cast iron is basically all I cook with anymore! They do require some maintenance though but well worth it! They do bring out the flavor in food!

    Float a paper towel a few seconds it will absorb grease or put big spoon in freezer a few min. The grease will stick to it’s you skim the top.

    Hi Meredith I am going to try your potatoes. My mother used a quarter inch of water and quieter inch vinegar in the pan which was burnt make sure you let it boil for 4 minutes dump the vinegar in the sink use a little soap and water all clean going to make your potatoes tonight thank you.

    Rub your salt in your skillet with a half of a potato, then rinse and dry with seasoned towel. Works great.

    My Grandmaw Hooks was a country cooking woman she could cook anything make the best clicking and dumplings she would buy a Hen that weighed about four pounds put it in the pressure cooker for about two hours get it done take off the heat and then roll out the dumplings on a pillowcase with flour sprinkled on it she made them the way you make buttermilk biscuits she would get her a roller pin and roll out them dumplings and get her chicken good and got and put her dumplings in one at a time cook for about ten minutes and that fat from that hen made them taste so good one if the best meals you ever ate

    Those steaks looked perfect to me as i fix them fast and hot so that they are still pink inside but i use very little oil and a couple pats of Butter at the very end and i'm so jealous of the Farmer as he is one lucky man to have such a pretty wife that is a great cook as well and that is very rare in this fast food packaged world we live in today

    Yes Mam we are so happy to see that big bright ball in the sky! Been a long time since we seen it. Not ya ran out of propane! Bit to cold to be taking cold showers! LOL. Mashed taters looked ever so tasty! Lots of mud still laying around no doubt. Yep Crappie is the correct and you said it right. Or to us anyway. LOL. Chicken and dumplings is what we call it but found they call is stew / pastry when we moved up here to NC. Rene and I laughed so hard over your husband saying he an'it no chicken farmer! LMBO. Priceless!! Your daughter sure was eating it up. That had to tell ya you had a winner supper right there! Well guess you know they calling for snow so batten down the hatches over there and lets get ready for another mess to roll in.     I used to live in TN, but now back in the UK. To see your videos and hear you talk brings back great memories of such a great time there.     SE PA here. You may want to youtube Kent Rollins cowboy cook. He does everything with cast iron. How far are you from Clarksville VA? (I have family and property there) PA dutch that's called chicken pot pie but would need potatoes as well.

    Growing up, when we would visit my mother's sister in rural Arkansas, she would make me chicken and dumplin's from scratch. It was so good! Sometimes she would substitute chicken with squirrel. A little black pepper goes well with the dumplings.

    2-3 teaspoons of corn starch would thicken it into more of a gravy, and if you feel extra lazy you can use canned biscuits and just tear them up and cook them right with the meat for 10-15 minutes. It makes it appear more homemade with the odd shaped lumpy dumplings :) And we call it Chicken and Dumplings, not stew, it would need veggies to be a stew, just saying.

    my wife said to thicken your Chicken dumplings add a 1/4 cup of flour, never to much salt..!!

      Boil Whole Chicken, remove, debone, use broth to cook dumplins, add chicken back, mix flour with some milk to create a paste, thin with a bit more milk then mix into pot. Should thicken right up and make it creamy and delicious. I prefer the dark meat better than white. Also in a pinch instead of flour dumplins you can use egg noodles. I do the egg noodle bit as I haven't had the option of premade Anne's and it makes it a bit easier.
      My Grandmother and mother for big family dinners used to do the flour dumplins from scratch, cook the chicken, then build it in a dutch oven in layers.... lay a little broth & milk, layer of dumplins, more broth/chicken/milk, dumplins, broth/chicken, dumplins all the way to the top of the pan. Bake it for a bit so the dumplins were nice and fluffy, yet time for the broth to penetrate. None of it ever survived to the next day. Ever. Closest I've ever had in a restaurant over 50 yrs was at The Old Mill in Pigeon Forge.

    I made this last night but we add about 6 chopped hard boiled eggs and cream of chicken soup as well. It’s the only dish I can make that taste just like my Mommas. And only made with thighs......got to have the fat which means richness.

    I Add a stick of butter and a little milk and you can also cut the dough into 2” bite size pieces. Sometimes I put a can of cream of chicken soup also and it makes it a lot creamier . Not saying you need to change anything about your recipe. I was just sharing. 😀

    A friend of the family gave my Mother a recipe for homemade noodles to be made and used for chicken and noodles. So, these friends were going to be at the house one Saturday and they were going to show my Dad how to hang wallpaper, so Mother decided she would make the chicken and noodles. She got her flour, salt, dozen egg yolks, and iced water together, went to work mixing it all up, rolled the dough out really thin, cut the strips out for the noodles and covered them with wax paper to let them dry. The friends got there that morning while all that was going on and they started helping Dad hang the paper. Long story short, Mother had cooked the chicken and picked the meat off the bones. She went ahead and gathered up the noodles and slowly dropped them in the broth. She then added the chicken back into the pot and left it to simmer with the lid on. When everyone was ready to eat, whatever else she made, veggie-wise and the noodle pot was put on the table with homemade biscuits, and everyone sat down to eat. PROBLEM!!! The chicken and noodles were stringy, fibrous chicken and the noodles were like a darker yellowish wallpaper paste. We all had a big laugh over it and ate it anyway. It was still very good, she just hadn't let the noodles dry long enough. We would, from time to time, ask Mother to make her special Chicken Wallpaper paste after that. It always looked like chicken and noodles after that though!

    I use Anns dumplings they work well us to use canned biscuits an roll them out the are good also but that`s one of my favorite winter meals that an home made hamburger veg soup with every thing but the kitchen sink in it.Fry your hamburger out an use frozen mixed vegies an several small chopped onions an potatoes with home made corn bread hard to beat.

    Up here in the Hoosier state we cal them crappie with a short a. No matter where you are their damn good fish to fry and eat. Next time after you fix your grill throw them steaks on the grill. That's where they belong. Have a great day.

    cover the inside of your cast iron pans with lard and bake them in the oven for maybe an hr but not to hot , that's seasoning . I think you just like playing in mud lol who don't anyway I loved mud when i was a boy mama would make me strip on the back porch before I could go in the house and wash . Crappie are the best fish in my opinion . Chicken n pastry my daddies mother and chicken and rice and peas or butter beans my mama's mother but both have passed long ago but they were great cooks and greatly missed i guess that's why i'm such a good cook lol
