PART 1: Sugar Dahlia Tutorial: How to Make a Café Au Lait Dahlia out of Gumpaste

Dahlias are showstoppers! They make such gorgeous and memorable cake adornments. We’re here with a detailed tutorial in THREE parts, to help you master this challenging flower!
In part 1, you'll learn how to build the flower center and the first 7 rows of petals. In part 2 (coming soon!), you'll learn how to create the wired outer petals and assemble the flower -- and we'll show you how to make dahlia leaves. In part 3 (also coming soon!), you'll learn to add color to your flower and leaves using petal dusts and edible paint, how to add a calyx to the dahlia and assemble the whole flower spray.
Tools & materials needed for Part 1:
Gumpaste (recipe link below)
Cornstarch to prevent sticking
Shortening (optional; to condition your gumpaste while kneading it)
Water, egg whites, or edible glue, plus a small paintbrush
Gel colors (I used Americolor Ivory and Dusty Rose to create the dusty pink/peach color used in the tutorial)
3/4” styrofoam rose cone
18 g floral wire (any color)
6-petal daisy cutter (mine is approx. 2" wide)
Fine embroidery scissors
12-petal daisy or sunflower cutter (mine is from Wilton and is 3" wide)
Flat tweezers (optional)
Gumpaste rolling pin, foam pad, and large/medium ball tool
Dresden tool and dogbone tool (aka "bone modeling tool")
CelBoard (optional)
Petal guide:
Cut 4x petal sets with 2" wide 6-petal daisy cutter, for the first four layers
Cut 2x petal sets with 3” wide daisy / sunflower petal cutter, for the next two layers
Cut 3x more petal sets with the 2” wide 6-petal daisy cutter for the 7th layer of petals (these are individually shaped and rolled)

Are ypu working in ac room , my house is in the area which has lot of humid. 😕😕😕 i love to make flowers but couldn't. This flower is amazing 😍😍😍😍
No, we don’t have air conditioning at our bakery. And it definitely gets quite humid here in Seattle, on the many rainy/drizzly days we get. It can be tricky to make sugar flowers when the air is damp and warm, so it’s worth investing in a dehumidifier for your workroom. That would make it much easier. So would using the right gumpaste - we have a recipe in our description box for gumpaste that still works really well in humid air. I’d also recommend storing your flowers in airtight bins with some silica gel packets tucked inside to absorb extra moisture.

Is it possible to make with fondant
No, sugar flowers like this can’t be made with fondant. Fondant is for covering cakes. Gumpaste is for making flowers. Fondant doesn’t have the elasticity, strength, or quick-drying capabilities that gumpaste has. In other words, you can’t roll fondant nearly as thinly as gumpaste - not even close - and it will never dry out and hold its shape in the way that gumpaste does.
