- Sugar Flower Tutorial: Classic Rose | Honey Crumb Cake Studio
The ultimate sugar flower for cake artists, and we’re here with a detailed tutorial to help you master it! We’ll show you how to make this gorgeous & timeless rose from start to finish, and how to add realistic color accents using petal dusts.
For you fellow flower nerds out there, our roses in this tutorial are based on a variety called “Peach Avalanche”.
Tools & materials needed:
* Gumpaste
* Gel colors (I used "Deep Pink", "Egg Yellow", and "Ivory" by Americolor to create the peach paste used in the tutorial)
* Cornstarch to prevent sticking
* Shortening (optional; to condition & moisturize your gumpaste while kneading it)
* Water, egg whites, or edible glue, plus a small paintbrush
* 1” styrofoam rose cone or 1" styrofoam ball
* 18 g floral wire (green) and 24 g floral wire (white)
* 5-petal rose cutter (I am using the JEM “Easy Rose Cutter”, 100mm size)
* Individual rose petal cutters or tear drop cutters in two sizes (1” wide, and 1-1/4” wide)
* Fine scissors
* Gumpaste rolling pin, foam pad, and large/medium ball tool
* CelBoard (optional)
* Dresden tool
* CelStick or mini frilling tool (or bamboo skewer!)
* Petal dusts (I used Squire’s Kitchen “Chestnut Brown”, Sunflower Sugar Art “Apple Green”, Crystal Colors “Fuchsia” & “Pumpkin”)
* Dusting brushes - one flat-edged brush, and one round/fluffy brush
* Green floral tape
Petal guide:
* Cut 6x petals with 100mm “Easy Rose Cutter” for the first two layers
* Cut 5x petals with 1” wide rose petal cutter or teardrop cutter for the next layer (I always cut 6, in case I tear one during veining, etc)
* Cut 5 more petals with 1” wide rose petal cutter or teardrop cutter for the third layer (I always cut 6, in case I tear one during veining, etc)
* Finally, cut 7 petals with 1-1/4” wide rose petal cutter or teardrop cutter for the final layer, which will be WIRED

OMG, how beautiful! You are so talented. I absolutely LOVE roses, always have, and funny but I noticed that the original date on this video was Feb. 4th, my late daughter's birthday! We used roses the exact color you made at her funeral and I dried all of them and used them in arrangements and floral potpourri bags to give to family. We live in a fascinating world when you put times and places/pieces together! One last thing...the dislikes up there are the people who are jealous because they can't make these, or won't even try!! And yes, I definitely let the flower (and wired petals) dry thoroughly before adding petal dust. I’d recommend letting everything dry overnight before adding color, but if you’re on a deadline, 3 hours should suffice. :)

Hi Finn, thank you so much! Are you referring to our gumpaste recipe? (We don't use fondant to make our flowers, as it's too soft to dry out properly and also doesn't pick up details from veiners very well.) Anyway, glad you are enjoying the recipe! We make lace out of a few different materials here at Honey Crumb, including SugarVeil, and Royal Icing. It depends on the design. We don't usually use gumpaste for details (like lace) that will be glued directly to the surface of a cake, as gumpaste isn't very pleasant to eat once it has dried hard! It's better to use softer things for exterior decorations.
Hi again, I know you’re making your beautiful roses out of gum paste. I just thought you had a recipe for laces to put around a wedding cake for example? Your fondant and gum paste recipes are much better than the ones you can buy❣️Thanks.
@@finnnielsen6901 Hi Finn, just to clarify -- we don't actually have any recipes for fondant on our blog or anywhere else. The only recipe we've published is a gumpaste recipe. We usually buy our fondant commercially, rather than making it here in our studio. (It would be ridiculous to make it ourselves, given the quantities we use each week!)
Now I'm not sure I understand what you mean by "laces". Are you talking about LACE? Like, edible fabric details? Or are you talking about LACES, like shoelaces, or ribbons to lace up a corset? As I mentioned in my previous comment, we don't use gumpaste for things like lace. We use SugarVeil, or we pipe the lace by hand using Royal Icing and a narrow piping tip (like a Wilton 1). You can buy SugarVeil online (and you can find lots of tutorials on how to use it via the SugarVeil website), and you can find lots of easy recipes for Royal Icing on the internet, including on our blog: honeycrumb.com/blog/2021/2/2/cookie-decorating-recipes. But you need to have good piping skills to create hand-piped lace out of Royal Icing! SugarVeil is much faster and easier.

Hi! In the video (e.g. 1:40) I'm just using a fluffy brush, dipped into a container of cornstarch. It isn't any special kind of dabber. :)

So nice of you, thank you! We store our flowers in large, lidded plastic bins lined with compostable packing peanuts, and a couple of packets of silica gel tucked inside to absorb any excess moisture. Incredibly realistic!! Thank you so much for sharing. I had a go with sugar paste roses a few years ago but ended up down the buttercream road and would like to try them again. I have some of the basic tools, are there any you would recommend just for a beginner? I don’t want to buy every tool in case I don’t continue with this art form. Thanks :)

Hi Carla, loved the video for making roses with an added row of wired petals. Wondering if I can ask for some help with the wired petals...my wires don't seem to have attached/glued to the petal and consequently are spinning around and one I could even pull off after having taped them all together. I used the same size wire that you suggested and let them dry overnight. Would you have any other tricks you could pass along. Thank you so much, Debra
Hi Greg, sorry you had issues with the wires. Did you use cloth-covered floral wire? Or was the wire bare? Without the cloth, there's nothing for the sugar to grip onto. Also, if you dipped your wire and then didn't wipe off excess before inserting it into the petal, it may have been too wet -- this can affect the grip as well. (A damp wire sticks to the gumpaste better than a wet one.) Finally, you'll see in the video that I always pinch the paste carefully at the point of insertion, to ensure that there is a little bit of paste extending down from the petal and onto the wire. This is the best practice to guarantee good adhesion!
Amazing tutorial
I would like to know how to arrange the flower. I assume I can’t insert the wire (flower tape) into the cake, right ? How do you do it?
Floral tape is essentially crepe paper that's been waxed. It's used all over the world to wrap flower stems (both fresh, and sugar) before inserting them into a cake. We always instruct the caterer (and/or client) to remove the sugar flowers from the cake before serving it. If you would prefer not to insert a floral tape-wrapped wire into the cake, you can use a poly dowel (with Royal Icing squeezed into it) or you can use a posy pick instead.
