Holy Cow! {no cows were harmed in the making of this video} You lucked out with that meat slab! What an amazing thing to experiment with! The results look delicious and authentic. I do really like to broaden my horizon and intrigued to taste couple of your recipes just to compare… here is my question, you always do the tastecheck with Monica at the end of the video, how do you know how a real piece of meat will taste when you are fully vegan? You know that real pastrami recipes are also deleviping, it sure is not the same as it was like 5-10 years ago. Sorry about my English, not my first language :) cheers from Cologne/Germany

My guess is that they're building hype for a B2C release
I think most of the 'restaurant only' products want the cache of being featured by chefs, then expect to launch a consumer product.
They want to overcome resistance in restaurants, and offering them an exclusive product first is one way to get them interested.
And this all goes to making these products more accepted in general.

I’ve had 3D printed vegan meat in London that’s probably just as good as this! It was the closest thing to steak I’ve ever had! I’ve also found a vegan steak in supermarkets there that tasted like corned beef. The UK has great vegan meat options!
Have you tried Juicy Marbles products? They look quite similar and can be found in the UK
@@emmahallard1949, Chunk's factory is actually in Israel (that's also where they do their R&D). So maybe they'll export to the UK sooner than later, given that it's actually closer.

What is the Veef slab made from? Mushroom, banana flours, pea protien? Is it gluten free?
Not gluten free. Chunk is made with water, cultured soy protein (defatted soy flour, soy protein isolate, gluten), coconut oil, natural flavors, beet juice concentrate color, iron, salt, vitamin B12.
@sarzootashoota351 I just looked up soy protein isolate . Which according to the internet search says spI is Gf. Those natural flavors are the only thing I question as a possible hidden gluten mask.

Among the things I miss is pastrami ❤ I want to come to your house for lunch 😂 I’m so envious… I am SO impressed with how much plant based is coming on, I have some seitan in the fridge I started making 2 days ago, it was meant to be beefy looking but it’s more chik-n-y, you are a true inspiration, thank you.
It's just crazy how far plant based meats have come, this is even more impressive than I could have imagined, really was.

Doees that first brine/marinade actually do anything? There was no acid so it wouldn't penetrate, and you washed it after soaking it over night which seems like it would just wash it all off? I'd love to see a comparison with and without honestly.

Those are wood chips not chunks. Better to use larger pieces of wood and don’t soak as that just adds steam rather than smoke.
yeah! I used chunk wood charcoal and topped them with the soaked wood chips!

What in the hell would you have to do to salt to make it non-vegan? Whatever it is, it would drive up costs. I can't imagine there is a premium market for adulterated salt.

@SauceStache, @5:15 or so in, you said, "ground coriander or cumin." Those are SO not the same, so which did you mean? I found most of what you put into the marinade just nasty. I hate cinnamon and ginger and what-not in my savoury foods, which explains why I never liked brisket, I just never understood why it tasted so nasty. That's like everybody putting maple syrup in fake bacon recipes. Bacon isn't supposed to be sweet, and maple makes it nasty. I hate maple syrup touching anything savoury on my breakfast plate, especially eggs, when I ate eggs, because it ruined everything. Anyway, this fake meat looks amazing, but I will definitely not be trying this recipe.
I also noticed that and was a bit confused. Coriander and cumin are very different flavors.
Hope you will make your own Version. I hate it to see food i could never get here in europe

Why use curing salt? It's used to make meat to not spoil and I don't think it's needed for vegan meat. There's no decaying carcass here. Curing salt contains sodium nitrite which when heated creates carcinogenic nitrosamines. Which is probably one reason why processed meat is so bad for you, worse than processed vegan meat which usually never contains sodium nitrite.
It's a detectable flavour element, in that the flavour of cured meats comes in part from the chemical interactions of the curing salt. So if you're replicating the flavour, you probably have to use the same salts. The very lack of nitrites is one reason why vegan substitutions are often deficient in their simulation of the original article. Good replication of meat lowers the bar to entry to the vegan lifestyle for former carnivores, which it ideal, since the objective is getting people off of meat. Even a nitrosamine rich vegan diet is omitting meat, and once someone is eating vegan and has ways of moderating the withdrawl from meat, they can then work on expanding their diet.
This is what confuses me about some of Stache's videos. At times he treats meat analogues and substitutes as if they're the real thing. Part of the reason curing salt is used in cooking is to impart a reddish color when the nitrite interacts with the myoglobin in the meat... And unless I'm wildly mistaken, there shouldn't be any in that slab.
He's probably just following a typical recipe to see how well it can be an easy substitute for everyone

MEAT is defined as a few things. In the English language words can have multiple usages and different definitions. Are you telling me you are an adult and have never in your life heard someone calling something the "meat" of something? Like the "meat" of a grapefruit?
If I was SELLING this, which I'm not and I was calling this pastrami on the label without any other defining wording then use it would be mislabeling and I agree with you, but its always super common to see this labeled as vegan meat, plant based meat, or soy or gluten meat, if you are too stupid to understand what that means thats your fault not mine.

Vegans cope. Man, i like your food because i like vegetarian foods. But a lot of these dont taste or feel similar to the foods you try to replicate. I think your videos would do a lot better(And vegan foods in general) if you stopped trying to emulate meat.

Been vegan 10 years and while lions mane mushrooms make a really good steak I’d love to try this n if it’s as good as you say it is which I’m not doubting you I’d want to be able to continually purchase it. I wish the very good butchers were still around as i think they had some of the best vegan meats
