The shell has a lot of calcium, so it should be good for them. One website says shellfish is bad, but I can’t find anything to back it up as to why. They’re clearly having a ball with enrichment. It shouldn’t be logically any different than cuttlebone.

And i will have to sit on the apartment balcony with the door to it nearly closed in order to not, quite literally, throw up. I've also had similar, although less extreme, experiences with shellfish.
I don't think they would ever feed their birds something that wasn't okay they are very well informed But also it's very common for a lot of birds to eat some kind of meat (worms, bugs, fish, red meat) and there's nothing particularly different with a langoustine that springs to mind that would make it dangerous
It’s probably because of things like possible parasites. This is for enrichment purposes, I think, so, since the birds will eat it cooked, it’s better not to risk the birdies getting sick.
