The title Byzantine was a title given to them by others to distinguish them from Western Rome and the later HRE, which the Byzantines did not like very much, since the HRE was formed when the pope up and said "Hey Charlemagne I see you have made quite the large empire there, care to be the successor to Rome?" and of course, the Byzantines being the actual Romans and the literal successors of the Roman empire did not take kindly to that title just being handed out to some random guy from France (Modern day Belgium apparently, but you get the picture, he was from the Frankish Kingdom).
The Byzantines weren't actual Romans though. They quickly adapted to local culture and just became a large Greek kingdom calling themselves Rome while not even owning Rome.
