If you’re still looking for the vinegar recipe, make sure to use sugar cane vinegar, simply cane vinegar. Then just add condiments like onions, garlic, maybe chilies if you like it spicy, then just let that ferment in the vinegar. It would be safer if you look for Philippine vinegar to get the flavour profile you’re looking for cuz it’s different from other countries. The US has Asian stores or filipino stores to easily find that vinegar.

or coconut vinegar as the base. and aside from the above ingredients, also add garangal or a tiny portion of ginger. The vinegar, added with calamansi and soy sauce is the basic dipping sauce for many Filipino dishes. Garlic rice is usually the rice of choice for breakfast.

The fish you ate was bangus in Tagalog ; milkfish in English. The milkfish is the national fish of the Philippines. It was good you ordered the boneless bangus because the fish bones are thin and soft. You don’t want any bone gets stuck in your throat because it’s hard to remove it.

The Filipino way of eating the daing na bangus is dipping it in "spiced vinegar" or vinegar with onions, garlic, chilli, and a little salt and pepper. Another dip is calamansi with soy sauce and chilli. For the "Americanised" palate ketchup is the go-to dip, but since we are Filipinos our ketchup got to be sweet so we have banana ketchup. 😊

You passed on calamansi juice? It’s NOTHING like lemon. Locals think its English translation is lemon or lime, but the taste is not the same with neither. It’s a cross between lime and orange. That calamansi is really good in a juice form. But enjoyable to watch you enjoy food in the Philippines. Much like Thailand, a lot of the food has good strong flavours. That’s why I myself can’t get enough of them.

You don't pour vinegar or soy sauce or kalamansi on your rice. It is supposed to a DIP !

You don’t eat pork? Are you Muslim or Arabian? I’ve been watching your blogs. You’re so down to earth eating whatever people recommends, but not pork. So far so good watching you going places. That fish dish is called DAING NA BANGUS (white fish) and it’s good you’re liking Filipino foods. What restaurant is this? Less than $7 for 2 meals. That was really good.

That tiny green thing that you call lemon is actually kalamansi. You dont squeeze it over the fish. It is supposed to be a dip with soy sauce or fish sauce and chillies if you want to add a little spiciness in your dip. In the Philippines a dip or sauce is essential in every dish. And chillies are optional. You add chillies according to your tolerance .

I think it's also okay to squeeze it over fish, sometimes I do this too but the common things is the soy sauce/Calamansi/chili dip.
