I would go. I used to go to Ningbo for work regularly. China is fascinating and Ningbo at least was far more "western" than I imagined with lots of international brand shops. The Chinese are underestimated by the West. I was lucky enough to go with a Cantonese/Mandarin speaker. So I would go with a friend or family member who can also help if you have an issue.
yes go, dont worry , safety concerns are problem for asians in uS but not in China There are many americans/canadians/british travelling or working as expats in China n making videos of their trips inside China . If you watch their videos , they will always tell you that they feel very safe and some give tips on accomodation , cashless payment , food n so on, You can find many of these videos in YT

They are a young couple with a 1 year old baby. They are now back in China. I don't know them personally but they are a wholesome Christian Family so you should be in good hands.
