Various Ox Recipes in Yunnan (II)
As an ingredient, ox skin has none but one issue, that is it is very difficult to deal with. Ox skin will need to be roasted over high heat repeatedly for more than 2 hours and soaked and rinsed several times. You can deep-fry, stew, braise clean ox skin or make it into ox skin jelly or cold dishes. All pork rind recipes perfectly apply with ox skin. Its texture is more varied and tender. It seems that one will be filled with collagen after finishing the ox skin dishes.

As a West African most of these dishes are recognizable to me! We also eat hides, and use them for different dishes. I’m so glad we all share very similar cultures and cuisine

I love the way Dianxi can turn one ingredient into so many different dishes. I also love that she takes time to show parts of the Dai culture, and uses them in her everyday life. And the way Uncle Peng looks at Dawang at the end is so adorable, I’m glad her whole family loves Dawang as much as we all do 😊

Actually I think it is not Dai culture but Yunnan culture.Dianxin lives in Yunnan province.Dai culture may be too narrow and not relatively correct.
@@divayuyu92 I am referencing the culture she specifically mentions in a lot of her videos. In this video, she specifically refers to Dai-style aprons. She also has a video that mentions “Dai girls.” In a broader sense, yes, she does feature Yunnan cuisine, geography, and customs. But based on all of the videos of hers I’ve watched, it seems to me she mentions Dai culture the most, when she’s being specific like in this video.

Collagen is broken down into amino acids when you digest it. As long as you eat enough of any protein your body can make collagen. your body doesn't distinguish
