Big mistake, plaster has fire resistance and insulation and sound barrier, much quieter house, no mold growth either. Easy to fix and repair with Structolite and diamond veneer. Best thing is no dumb sanding.
You are definitely correct even when I'm working on newer homes I usually do it old school
Did the entire interior of an 1890’s home, stopped counting at 25 mouse carcasses, bags and bags of nuts and a couple of squirrels’s bones. Well, the worst was the newspaper filled old light switch box that was actually drywalled over 🤣

You can eliminate most of the pounding with a small SDS drill and chisel attachment. Just get the chisel point between the wood lath and plaster and pull the trigger. The plaster dekeys immediately and comes off in sheets after you get the hang of it.
Looks like you've got plenty of knob and tube in the walls. That looks just like my current project for a neighbor....1840s miners cottage 3 room to kitchen conversion. Found a nest of grounded NEUTRALS! .....to a kitchen sink cold water supply. May as well have plugged in the faucet, incredible that no one we're aware of was killed over time.
Wood lath is great kindling.
Thanks Ed for the great tip, I’ll definitely try that. The metal lath is what always adds that level of difficulty, unfortunately it was used in combination with the wood lath. But I still think the SDS would have helped. All that old wiring has to addressed, probably not as bad as your situation yet still not to code
@@HomeRepairTutor In and of itself, knob and tube really wasn't a bad idea. The substantial separation of hots and neutrals help to eliminate the possibility of arcing. Most of the circuitry was low demand/impact lighting with an occasional receptacle. The problems occur in a lack of grounding (or improper grounding in my case), brittle rubber and cloth insulation and, finally, more contemporary improper splicing to add circuitry. Blown in mineral fiber insulation also presents the possibility of overheating due to a lack of air movement. This one seems to have been wired the day after the invention of the lightbulb. The knobs are brown glazed clay, not the white porcelain I've always seen.
