    I visited New Orleans in 2021. It was my favorite place I've ever been. That accent is so unique. nowhere else in the country. The food blew my mind. Absolutely my favorite food. The culture, history, and beauty are amazing.

      That’s usually how everyone cooks back home in Louisiana. The only difference is the food we cook is fresh and healthy. Not fast foods. I didn’t grow up eating fast foods, so I still as an adult don’t touch fast foods.

      Creole means a French person born in America. At some point black people or mixed race people were called Creole too. It seems to go hand in hand with the food traditions in the South mixing French, Spanish, African Native American etc.

      @Right Cha The Acadian French escaping from Canada (Cajun) used Creole to tell the difference between themselves and local French/Spanish. This was in French territory, Louisiana so makes sense. I think the root word is Portuguese and could be used to describe any different group. As far as first I have not read that and I know what the dictionary says. I read into the deeper history.

    I love how the youngest completely stopped eating to listen closely to the Elder. That's how it goes when you have respect for elders. You stop what you're doing so you can pay FULL attention bcuz you NEVER know when they're going to drop some knowledge or wisdom.

    My grandma’s in town and she showed me how to make it but, she had me fry the fish just a little so it won’t break up once it’s in the sauce. I’m making it again today and yes, this is an expensive dish and can’t wait to put it in our restaurant we’ll be opening in Atlanta.

      Mine too. My grandmother always fried fish before adding it to something else. Kept it together and add nice flavor and crisp.

    What you see in the pot at first is what we call the trinity. Celery, onions and bell pepper.

      A lot of rural Cajuns didnt use celery that's more of the African/French influence. Coubion does not traditionally call for celery. If you listen he says onion & bell pepper. Cajuns did not typically grow celery originally.

    They remind me of my Grandpa's side of the family. Country and creole!!! Would go out and hunt or fish, come back clean it, put it on the stove and serve it for dinner. Nothing like freshly caught food. Especially when it's cooked by an old school creole. You can just taste the country in the food. Lol

      California does have many Creoles restaurants, since many people from Louisanna migrated here for some time.

    I tried this recipe with Louisiana Fish Fry Shrimp Creole base, 1 can of tomato sauce, holy trinity veggies, 2 catfish fillets cut up and some Jumbo shrimp in the slow cooker. Talk about good eating. Thanks for the recipe.

    Omg that looks delicious! I love catfish and shrimp. I never had them together but I would definitely try it! I love Cajun & Creole food! I would like to go Lousiana someday.

    I'm a Virginian & my dreams of coming to Louisiana get stronger every day, I LOVE LOVE the accent, the culture & especially the food! Being a cook I have always dreamed of tasting AUTHENTIC Creole & Cajun food. It's so beautiful there as well! WOW! My heart melts❤❤

    Its funny how people who don't know what its like in Louisiana there is some of the greatest in world who live in Louisiana and some of the best cooking everything from Cajun to oriental to Hispanic , really people from all over the world that added great taste to our Louisiana cuisine!!!     I live in Iowa but I'm born and raised in New Orleans we grew up around all that seafood that a lot of us never learned to catch. I wish I was taught to hunt and fish when I was a kid. But I gotta say I can cook that Louisiana food pretty good.

    I've always been absolutely infatuated with Louisiana cooking ever since I was a kid hearing my dad talk of their cooking in such high regard when we walked by a Cajun restuarant one night.
    I gotta say. I swear these people were gifted their culinary ability from God himself.
    The holy trinity is by far the most amazing smell to ever fill my kitchen when I made gumbo for the first time.
    The grandpa is right too. I swear, after a long day at work and some good hard training at my mma gym, I made gumbo for dinner and, woke up the next day completely recovered with loads of energy.

    Protecting that recipe. We got onion, bell peppers, looked like 3 cups of water, 2 cans tomato sauce and a healthy dash Tony Chachere's, shrimp and fish. I feel something else is there because of that color.

    The beautiful young man is Dorien Edgar. The one cooking is his dad and the man with glasses is his dad's dad. Both Dorien and his dad play/played collage football.

    I really wish i lived down south. I would love to live of the land like all these guys do. I'm from Minnesota and i have Minnesota nice in my blood. I love to help people out. And i know people like Troy does a lot. And I've been working on my cooking skills. I'd love to make a big meal like this. Yummy

    Our regional Black-LaLwizyànan ethnic group's Jambalaya rice dish of Louisiana derives from Jollof rice of the Senegambia region from the Wolof ethnic group of Senegal, West Afraka. It doesn't have anything to do with no Cajun food culture. It's a 100% Black-LaLwizyànan created Jambalaya rice dish.❤🔱🖤
