- In this video I smoke a Chuck Roast like a Brisket. Chuck Roast is referred to as Poor Man's Brisket but these days Chuck Roasts aren't so cheap anymore (lame). It's a great alternative to brisket if you don't need so much meat. This cook ended up taking longer than it usually does for me, sometimes that's just how it goes!

Briskets here where I live are excellent. I just bought a 26lb brisket for 2.89lb. Great deal!
Sprinkle Kitty - I did one of those this past weekend and it was about 3.5 lbs. Pellet smoker set at 225F, sprayed every 30-45 min with apple juice. I wrapped at 160F and it too seemed to take a really long time for the temp to rise. I bumped the smoker up to 250F after cooking for a couple hours wrapped up and after about a total of 9 hours we hit 195F. I turned the grill off and cranked up my oven and set for 180F and let the chuck roast rest in the oven for about an hour. My temp of the roast came down from 195 to 180F in that time. I unwrapped the roast and it was a little juicy, but it cut tough and while it had a great bark on it, the meat was a little dry and a little tough. I'm thinking I probably should have cooked hotter for less time. Anyway, it tasted good when reheated in a pot on Med heat with a little water added. It did get a little more tender, but nothing like my prior briskets. Anyway, thanks for sharing. I too use thermoworks probes and temp gauges so I know my smoker temps and meat temps are accurate throughout the cook. Next time, Higher heat, earlier wrap like 145F, and a little faster cook which I think will help the meat be more tender and hold the moisture better. Thanks for sharing, it looks great! (but your right, it's nowhere near brisket good, LOL)
During rest I always make sure I maintain an EXTERNAL temperature of at least 138F. (usually 145-150 to account for spatial and temporal variation) I usually rest for a long time in a turkey oven, but this is especially true in a cambro or cooler. The meat is heating the air, the opposite direction of cooking. Also the surface of the meat is more likely contaminated at start of cook (although probably pretty clean by end). For same reason I never put probe into center of meat when cold, i wait until I think the center is above 140 since you are bringing surface germs into internal parts. Most pathogen contamination is surface contamination during processing, it is not from the internal blood of the animal. Main reason chopped meat can be problematic. Loved your video, great energy.

Sprinkle Kitty and I love your vids keep it up! I am doing two huge chuck roasts tomorrow (3.74 and 3.93 lbs) and based on your vid decided to start at 0800 because I know it might take longer than I want! And The last few times I did chuck roast like a brisket it took forever lol.
Smoked chuck roast...the poor man's brisket! I've served many a smoked chuck roast to friends (even Texans) and made no qualms in telling telling them what it was. Although I've never had anyone say it was better than brisket, many have said it was just as good as some brisket they've had (I can believe it, as I've had a lot of so-so brisket in my time). Something I've learned from a friend when cooking larger pieces of meat.
May I suggest adding an aluminum water pan to the smoker, before putting the meat in, get the smoker up to
350° to get the water up to temperature, when it hit's that temp, reduce to your cooking temp.
This adds humidity to the cook chamber, and may help expedite the cook time!

Great video. I too recently smoked a Chuck roast. It was delicious, but good lord did it take all day to do! The lesson being to cook it at a slightly higher temp, maybe 300 degrees instead of aiming for 200 or 250. That’s the only way I can see one of these smoking in four to five hours. They are delicious in place of a more expensive brisket. Cook up nice and tender too.

Sprinkle Kitty I love your videos and your personality. I Googled smoked cream cheese and met you! It doesn't hurt that you are hotter than your smoker temp when you do a cook!
I do 250 until 160-165, then wrap and bump to 300, works good for me. Also I rest mine in oven at 170 for an hour, then out covered for another hour
I did a similar cook, wrapped and smeared with bacon grease at 165F then 3 hours at 300F to break the stall. Total cook time 7 hours plus 45 minute rest. It was melt in your mouth tender.

Good HONEST video. I’ve tried 3 times (225/250/275°)(5/7/9hrs) (foil /butcher paper/aluminum pan covered) I can’t keep it juicy/tender enough for my liking. Great taste…but the only way I can enjoy it is shredded and used for tacos, burritos or pizza. I won’t quit trying though.

Thanks for the video. Make another one please. I like your style. I am making a chuck roast tonight. Mine has been on the Traeger 3 hours now at 225. Its temp was now at 142. I bumped it up to 250. I want it at 150 or so to wrap.Hope mine turns out as good as yours.

Sticking thru lol the video. You did a good job. I was looking at brisket yesterday but it didn't look like a nice cut and was kinda green lol. Passed. Plus it would be my first brisket to smoke but price was 73 dollars and just not a good cut . Will go back after a better cut is in and not green. But for a practice run.. a chuck wouldn't be a bad idea .. plus it's winter time and my smoker is charcoal so the wait time is definitely going to take longer lol it's 19degree out. Maybe il try this first to see how well the smoker holds temperature in this weather

The best advice I could give an amazingly talented cousin is…….sprinkle the damn kitty!!!! Honestly where I live in southern Idaho I think if bought on sale, brisket is cheaper than chuck. At the most, Costco seems to have prime brisket for 4.29 a lb. Today Fred Meyer has brisket for 3.99. Great video cousin!!

Not really. I wrap generally when I’ve got the bark I like. Wrapping also should help speed up the cooking process so I don’t think it contributed to a longer stall in this case.

I have a Pitboss Competition grill. I tried the chuck roast and I used the smoke setting for a couple hours, wrapped at stall and pulled from grill at 155 degrees. It was a 6 pound roast but it was a little dry even after resting for 1.5 hours. Any suggestions?
I love how all the chuck roasts experiences are the same, they take way longer than we want them too. 😂. It’s a great piece of meat though.
