You could but you could also already be working inside a premiere pro project like a documentary or something and need to do it this way

How would you do this is Adobe After Effects? If possible :))

Use roto brush to select the subject & cut it out from background. Then dupulcate the same layer and disable fx from the duplicate layer . Add text layer in between the layers
