There should be 90 overs each day of the test match. An extra 30 minutes are added in the time to complete the 90 overs if they aren't complete, 2 overs are reduced for the change of innings. Sometimes due to bad light the day ends early since it is harder to see the red ball in the evening, as compared to the white ball used in limited overs cricket. Every Stop in the play whether it's a drinks break, tea, lunch, a batsman gets out, rain stops the play, wind, overcast conditions, etc can change the whole momentum of the game.

The most important metrics of success and one of the most important entertaining factors in a 4-5 day test is about winning the number most number of sessions across the 5 days. Each day has 3 sessions. Morning- 25/30 overs Post Lunch- 25/30 overs Post Tea- 30-35 overs A test match will have a maximum of 450 overs (90x5 days). But there are strict timings for every day. If a match is going tight and is supposed to give a result , the umpire uses an additional hour of play. Matches also end early if its going towards a draw on day 5 if both captains reach an agreement and shake hands on the same. The change in momentum that you noticed keeps changing and mostly favours the team that has won more of them. 2. The unnecessary dive from the keeper that you mentioned is actually skmething that comes to them naturally. In this case, since the match is in England which has notably much faster pitches and more swinging conditions, keepers require much more faster reflexes and foot movement behind the stumps. This is why the keepers move much early and dive as well so as to cover distance and catch the ball incase there is a late swing after the ball cross the batsman.Lords ground in particular is slightly slanted downward on one side so that is also another factor.

Minimum 90 overs in a day for test matches. Could be more if allocated playing time hasn't been used up once 90 overs have been bowled.
