    Hello Tom... As always enjoyed your "intimate" (and unique) video on wine. As a collector, expert on, and lover over Bordeaux wines I'm eager to get your advice: Hoping to try one (because of the expense) 1sr Growth Pauillacs... specifically Mouton or Lafite. a 2016. Given that I have a ONE SHOT at this REALM... which of the 2 would you recommend.

      The 2016 Bordeaux are going to be great but the top wines are going to need 5-7 more years in the bottle. When I try the 2005’s they seem so young still holding back, 2016 and 2005 have that in common. Many of the 2016’s now are in a tannic shell. As far as 2016 Mouton or Lafite I am partial to the refinement and elegance of Lafite but if you prefer body and power you can chose Mouton. Both of these wines need at least a dozen more years in the bottle to unfurl. To drink now 2015 have more roundness and the ripeness of the vintage really shines through. A very overlooked vintage.

    I must be the like you 30 years ago. I have close to 1,000 bottles in a "modern" cellar with glass wall. Insulation sucks but it looks cool. I have a question, Tom. I have Whisperkool unit that is set to 55. Based on measurements, I see that one far end of the cellar "air" temp swings frm 57~59 about 16 times in 24 hr period. I am told that the liquid temp doesn't fluctuate that much so I should be okay(by Whisperkool). Is this a safe environment for long term storage?

      A fluctuation in the air temperature is often present in wine climate cabinets, the better the cabinet is insulated, the longer the cabinet will be able to keep the temperature stable.
      Wine (liquid) reacts 10 times slower than air, so the actual temperature of the wine will fluctuate less than the air temperature.
      Temperature fluctuations are not good for wine, however, in a wine climate cabinet the fluctuation is limited to 1 or sometimes 3 degrees, and this happens at a cool temperature.
      In the most ideal situation, the temperature does not fluctuate or fluctuates minimally over 24 hours, but it is difficult to test which fluctuation disrupts ripening.
      It is generally accepted that large fluctuations are bad for the wine, such as fluctuations of 5 degrees or more.
      If the ambient air fluctuates 4 degrees during 16 times over 24 hours, you can speak of a wave movement, in which the wine temperature reacts 10 times slower, the actual temperature fluctuation of the wine is probably limited to less than 2 degrees.
      You could test this with a wine bottle with a screw cap and measure the wine temperature occasionally over a longer period.
      It is important to measure when the wine cooler has finished a cooling cycle, and try to measure when the compressor switches on, you can then measure both temperatures.
      In my own wine climate cabinet, the actual wine temperature fluctuates in some zones by 1 degree during 12 hours, in other zones (often a little higher in the cabinet) this can be 2 degrees.
      Probably not ideal, but it's not bad either.
      I'm also curious what Tom thinks about this.

    I appreciate the story but neither our wine nor us, age well and indefinitely. From a psychological PoV it’s time to start selling - their value will be in decline, as our health does with age.

      @@jonathandavis9507This may be true but they say you can’t take it with you. I have collectors who will absorb my wines. Luckily, my family will be fine financially without the value of my wines. The last act of my life will ensure my family will realize the appreciation of my wine cellar. I have financed both of my children’s college tuition thru wine sales.

      @@davidmckeeverI open my wine from my cellar every week. When I have my wine friends over I sometimes pop a dozen or so bottles. The latest data points to wine presently will not be a great investment vehicle in the near future (with certain exceptions). For example: you can buy 1990 Bordeaux at auction for less than many of the 2022’s. Something is broken! The first pricing of new Bordeaux are too high to allow price appreciation.
