Been trying to get the long bolt to break loose. Broke one wrench so far. Thought about heating the nut up but afraid it will melt the robber boot the nut rides in.

Heating it may unfortunately melt boot as you mentioned. Have you tried using an impact wrench that applies jolting to bolt? Thanks for watching, great question. As long as you don’t allow fluid to leak out of rear brake lines to a point where it allows air into system upstream, you should be able to just bleed rear brakes. Please keep us posted. 👍🧰
It did, I know for some taking things apart other than what they expected to take apart can be daunting. That is why I wanted to share how I did it. Plus I didn't have the right sizes handy to take it out.
If my caliper is good, can I leave the top bolt attached and swing it up out of the way to get the rotor off or would I have to remove it to pull the rotor?

That's because you don't want the rotor's to turn the opposite direction
The reason can be because these cars have the power/electric parking brakes

You don't need to remove the bolt on that torsion bar, just use an 18mm wrench on that caliper bracket.

F.Y. I you do not have to remove the top suspension bolt to remove the caliper bracket, it will clear the bracket so you can remove it.

Does it matter what type of break pad and rotors, if it's an electronic parking break or push parking break?

I did it with a wrench broke free then used a shallow but to get caliper off.
