It doesn't really make a lot of sense!
1) Adding the soda before straining the juice/syrup will reduce really much the carbonation. Ginger beer supposed to be fizzy!
2) I love ginger beer, which is really zesty - brown sugar, is rather the opposite [I rather would use it for ginger ale] - normal white sugar [or organic sugar] makes a much zestier ginger beer.
3) Ginger beer is always associated with lime - not with lemon. Again - limes are zestier which helps the ginger beer in this department.
4) Making a mixture like that, is a lot of work, and you can't really keep it. It would be better to make first the syrup and then last minute mix it with soda. Even using lemon juice, will spoil the mixture very soon [about 12 hours].
5) To get a "commercial tasting" ginger beer [commercial in the best meaning], use citric acid instead of citrus juice, and just add the juice at the end.
Optional: lactofermented ginger beer, is definitely made different - but takes far more time - and is not everybody's taste!
I personally find the molasses flavors of demerara and turbinado sugars don't so much lessen the zestiness of the ginger but add a greater depth and more complex palate than plain white sugar. Plain white sugar while nice creates a more two dimensional palate of sweet ginger and tart citrus. Whereas the molasses notes of demerara bring out a layer of the ginger I had not before recognized and I am unable to fully articulate.
The problem with using lime zest in place of lemon zest is the fact that lemon zest holds far more in the way of essential oils, as well, lime essential oils are largely bitter and vegetal not adding to the depth of the ginger in a really meaningful way. Alternatively, the profusion of lemon oil from the zest gives a wonderful bright citrusy depth of flavor that is missed with lime. As for the juice I do agree with you that lime juice is more agreeable than lemon.
On top of that, I have just made some ginger beer this evening and I opted for 1% citric acid by weight as opposed to actual citrus, partly for longevity purposes but also because citrus juices do not do well for maintaining carbonation. I force carbonate my beverages as needed using a rig I built, but even with this rig citrus juices typically cause all of the CO2 bubbles to immediately bubble out of solution the second pressure is released.
Hi Ethan Kaufman - as said, it comes definitely down to personal taste.
I rather like the roasty deep molasses aromas in a homemade ginger ale...
He's so cheery and adorable. Great enthusiasm!😊
This guy's enthusiasm is awesome
Where's the part when you add yeast and leave it to ferment?
That's the part where I have better things to be doing! Give it a go it's delish! :)
This drink that u made may even be delicious, but it is not ginger beer.
That's a good thing that for fermenting ginger beer you just have to leave it in a jar for a week or two. How amazing is that ?
Ahhh this looks SO good.
I would add the soda water after it is infused for 10mins. The bubbles die quickly and you loose even more bubbles after it is mixed and transferred to a new jug. Looks great though!
This is the happiest guy I've ever seen in my life.
***** You obviously haven't seen this guy THE HAPPIEST MAN IN THE WORLD
Jamie Oliver's Drinks Tube I stand corrected. Donal Skehan is the second happiest guy I've ever seen in my life.
looks delicious! can't wait to make this
***** Do it! Send photos! plus.google.com/u/0/b/116027252794147137089/communities/111293099851034021396
I really like this drink. I come back to this video for the recipe every time I make it. Thanks!!!
+Terence Vasquez That is the coolest comment to read! Thank you x
I find that this is still my favorite ginger beer. I've been making it for 5 yeas now and I've tweak it, sometimes more ginger or more lemon, but if its been a while I'll go back to this video and get inspired again. Thanks again!!!
LOL, it's still the best drink. I juice the ginger and lemon and make a concentrated syrup, and then I add that to a cup and pour club soda with ice.
Really nicely done. Ginger beer is a real favorite. Easiest recipe I've seen in some time. Fantastic when served with Bourbon. Blessings ChefMike
chef mike We love those blessings Mike, keep 'em coming.
Ooo please teach us to make butter beer next :D all the Harry potter fans would go crazy
charmixy Charmixy, you had us at 'Ooo'. Wonderful suggestion.
What is butter beer? Sounds interesting
margaret928 it's a sweet foamy drink made out of butter, brown sugar and cream soda :D made popular by Harry Potter as that's what teen wizards drank when they were in pubs. Some Harry Potter theme parks sell it and many others make their own version :)
charmixy
I'm always buying that at the shops and cafes. Now I can try at home
***** Yes Augustus, EXACTLY. Love that name by the way.
Amazing! I have to try this :D
Wonderful
Yay!! Alcohol-free drinks. Thank you, Drinks Tube.
Luniii737 Our pleasure - any requests for what we should do next?
Jamie Oliver's Drinks Tube
Nope. Why, you ask? Because mint with lemon is already my favorite. I just never thought about ginger.. Have to try that. :)
Your presentation is awesome mate. :D
Made it last week, was great!
icingfeestbeest Amazing! You'll have to send us some photos next time. Do you follow us on Facebook or Twitter?
Sounds lovely Donal, as i cant drink at the moment i think this is the perfect drink to make tonight, (sat night) thanks again

Jamie Oliver's Drinks Tube I sure did, it was lush. I doubled the recipe and put it in a carafe Alot of grating but you are right it was worth it and then you have the lovely refreshing Ginger beer. My OH was putting rum in his and whiskey in another one, i can drink again now so may give that a go too. Will send you some pics next time i make it and you can bet i will make it again Thanks again.
Donal is the best!!!
beautybelle87 You're right, we had some tests done and it turns out he actually is.
Jamie Oliver's Drinks Tube It's true they had me all hooked up to some fancy machinery! :)
Hi! I want to make some homemade ginger beer for cocktails on a party, but fear the fizz will not last, is it recommended to make the base, strain it and pour it into a flask the day before and then adding carbonated wates as i need it? How long will the mixture last in the fridge uncarbonated? Thanks! :D
Looks delicious! Homemade elderflower cordial would be a great one to see next.
James Brown Hmmmmmmmmmmmmm. There's very little we don't love about Elderflower.
Oh love elderflower! Sad we have to wait all the way until next June for more! :(
thx it helps a lot =D
Delicious...will be trying this for sure!#
***** That's what we want to hear. y'know we've got a Google+ Community for sharing photos of the drinks you make? plus.google.com/u/0/b/116027252794147137089/communities/111293099851034021396
So how different would the taste be if you were to just juice the ginger and lemon versus using a mortar and pestle?
I think I just saw you on Swedish television TV4? You know Swedish? :D amazing!
How ironic, thanks to Jamie some of us will have make our own ginger beer. Cheers 🍺
Looking very good! oh, and the ginger beer too hehe
SprinkleofWilly Oh Willy.
hahaha! :)
It's the energy from the ginger ale! Hahaha but I'm not joking, when will he arrive?
Next step, float a measure of dark spiced rum on the top for a Dark & Stormy.
Michael Carroll Oh boy. We might need a moment. Such good thinking Michael.
No you're talking! :)
Donal Skehan hahaha, thanks! I was excited to see a Donal video today here on Drinks Tube. Your energy is infectious and I always enjoy your videos, Donal.
That looks rather tasty. Though it seems to be a bit expensive to make I would think. I will have to see ginger can be grown where I live, as that would be the most expensive bit to come up with. Fresh would always trump canned.
TubaBuddha Where are you based?
Can it be made way in advance, by storing the ready product in airtight container and keep it refrigerated until it's ready to be served?
Aizuddin Khalid Absolutely. Just keep the syrup ready and add the fizz when you need it.
Looks great! Can't wait to make this - any suggestions for a replacement for muscovado sugar? That is not easy to acquire here
BuckeyeExpat You could use brown sugar rather than muscovado. Are you able to get hold of that? Where are based?
Jamie Oliver's Drinks Tube Brown Sugar is no problem, but the musovado sounds nice. I was thinking about taking fresh brown sugar and adding a bit of molasses to give it that heavier, stickier flavour?? Oh I live in rural Germany - i might find it in a speciality shop in a large City, but otherwise "exotic" ingredients are hard to come by
This looks really good, I think I'd put a bit less ginger in though.
Will it keep or do you have to drink it the same day?
Laura Carruthers Hi Laura, it would lose it's bubbles fairly quickly if you didn't drink it the same day. That said, you should be able to keep the syrup refrigerated for a few days after you make it. Hope you enjoy it.
Jamie Oliver's Drinks Tube Thank you, I'll give it a go!
Love this guy god !! So funny
he made ginger ale not ginger beer.
It says in the video description: Ginger beer (AKA ginger ale)
We're making lashings and lashings of Donal Skehan's Ginger Beer.
Please please do not call that beer. The only ingredient that has to do with beer is water.
Lunad93 Go and look up Ginger Beer. That's ginger beer. It's a thing. No, it isn't alcoholic, but neither is Ginger Ale. Don't get your pants in a wad.
Lunad93 Haven't you ever had apple or ginger beer? Neither are alcoholic; both are awesome.
A Brewer called Crabbies from Scotland brews alcoholic ginger beer. Yum. Recommended
Andy McA Crabbies is great.
always wanted to know how to make it myself. But how can i really add sparkles? Adding soda water and waiting 10 minutes will leave me with nothing. How about about adding yeast?
Scheld0r We wouldn't recommend adding yeast. If the sparkles are key for you, you could leave it for much less time. Enjoy!
Ginger beer is life
+ShaoLinh It's a bold statement... and we respect you for it.
It looks incredible! Donal is so nice! Can u make an alcohol-free mojito?
Ore Gazit We're always two steps ahead of you Ore. Have a butchers at this little number we made especially for Zoella Strawberry & Coconut Mojito Mocktail (for Zoella) | Cocktail Request Week
Oooh nice idea one of my favourite drinks! :)
One year ago today!
i have to try this one out :D
Jan-Peder Granholm Send us some photos plus.google.com/u/0/b/116027252794147137089/communities/111293099851034021396
Can I leave it more than 10 minutes? Or is that the limit?
Looks good! But why are you pealing the ginger if your are going to strain it later?
***** That's a good point, you really don't have to peel it.
Donal Skehan Jamie Oliver's Drinks Tube Next time you're peeling ginger, try using a teaspoon instead of a knife. It works shockingly well and it doesn't take as much ginger off with the peel.
Zelmel Nice tips Zelmel.
Nice thanks for that! :)
Sprig of mint? Ben would be proud.
Oh he'd be all over this! SORTED Food
How is it a beer when there is no yeast added and fermentation done ?
i like to use honey instead of sugar, and i also add some freshly squeezed orange juice:) it's a brilliant drink:)
Miha Stravs Sounds like a great bit of tinkering with the recipe. Send us photos next time. plus.google.com/u/0/b/116027252794147137089/communities/111293099851034021396
Turned out great! Oops, some vodka slipped into mine :)
No worries. It will be when I inherit that I will be able to grow my own produce. The house I am presently to get is not in any shape to move into, A total refurbishment is needed. So I can't do any gardening as I would need to live there to tend and protect it from thievery. I was just thinking out loud about it. I do love ginger beer. I don't usually drink fizzy drinks. Ginger and root beers are what I like most, but rarely buy. Making your own fresh sounds a treat.
TubaBuddha Thievery? Take care out there Mr Tuba. Not even Donal's Ginger Beer is worth getting hurt for.
Jamie Oliver's Drinks Tube If I get my moms house, I will have a hydroponic system in the basement. If I get the house I grew up in, I will be putting a high fence around the back yard. It's a small town so I am not expecting a problem. It's just that a friend in Arizona just had her huge watermelon stolen from the community garden last week. And it doesn't have any protection.
also a nice touch of irish
WHOOT! Go on Ireland! :)
Is Muscovado sugar the same thing as brown sugar? Or is it something completely different?
f00dify It is a type of brown sugar.
thanks. It's a bit of a stupid question, but I had to be sure.
I am in Tiffin, OH. A rural county seat in NW Ohio, of under 17K. So getting fresh ginger, much less the cost, is a bit hard to do.
TubaBuddha Okey Doke Mr Tuba... so let us know what you have in season right now and we'll think of an alternative drink for you to make :)
Any way to do this without the sugar?
Tracy Tureson You could try using honey
How would this taste if you reduced the muscovado sugar by 50% and replace with 1 cup of cranberry juice?
+electrotech12 Ooooo! There's only one way to find out!
That sounds a lot like a beer that Leinenkugel makes for their winter seasonals, They do a cranberry ginger shandy. Although this version of yours would be non alcoholic and far more prominent in the cranberry and ginger flavors. All the same it is a delightful flavor combination
man you look happy
He's always a happy chappy!
Could you replace the sugar with honey?
Dionnekuh Of course, that would work well. Just be careful on how much you use. Keep tasting to get the balance just right.
Why not use your peeler on your ginger?
No yeast?
Yum resfreshing,i am thinkin ginger tea lol :)
jheart Aquarious Ginger tea? Sounds like a pot of heaven. What's your recipe?
OH YES! :)
Donal Skehan aww thnz for reply,i don't know how to cook some menu, that's why i want to learn from your channel :)
HE SOUNDS LIKE THE LUCKY CHARMS Leprechaun
So beer can have no alcohol?
DelsonGirl This one can :)
well ginger beer is traditionally a soft drink/ not alcoholic
I think it's a British thing, it's a soft drink. I'm unsure but I think Americans have root beer which isn't alcoholic.
Hey you, Jamie, it would be great if you could write the ingredients in the infobox of your videos, just because some people have an accent or some maybe dont speak english as their mother-language, so it would be much easier for people (like me ;) from germany) to find those special ingredients we sometimes need and don´t even know them before ;)
would that maybe work?
Hi BOO YAKA. We have added captions / subtitles to most of our videos - if you enable those does that help you out? x
Does it has alcohol percentage.... Like normal beer
No - this is completely alcohol free!
If you want it alcoholic, you can just use still water instead of soda water and a bit of yeast, then you leave it to ferment for a couple of days. Not that difficult.
Won't your soda water go flat?
Ginger Beer and Ginger Ale is similar but totally different
Please can I have a Donal to take home? Thank you
seaweed and sand Certainly Madam, would you like him gift-wrapped, or as he comes?
Is this an alcohol-free version ginger beer? I mean, is there one that is actually beer?
Ilona Takácsová This is 100% alcohol free. However, you can buy/make an alcoholic version too!
Great recipe and a hot host... What could be better??
that's what we call soda, beer has yeast.
you can tell this guy never spoke to a traveller his whole life he would actually be afraid of them.
YAY, someone Irish :D
MrHpfan111 YAY!
GO ON IRELAND! :)
Thanks for the video i am using this as a project so if you fail me your dead
looks like lemonade with ginger.
Such a funny video!!he is cute..:)
Nice only difference when ill make it there will be 4 times the amount of ginger XD
tomber220 Fiery!
so this isn't actually beer though? no yeast?
Yes. Kind of like Ginger ale isn't an ale.
where's the beer?
mmm looks good
Elyse Wilkinson It tasted SO good Elyse. Definitely one to try at home.
i don't understand why so many dislikes?!!!!
jealous ?
Because this is not actually ginger beer, which should be fermented.
why is it called ginger beer when there's no alcohol?
Adelyn Tan Tradition. It's been called Ginger Beer for hundreds of year and doesn't (usually) contain alcohol, although there are some very delicious British Ginger Beers available that DO contain alcohol too. Confused yet?
like root beer in american, it can be both
he is sweeter than the ginger ale ❤️
Awwww!
With all the mint can u imagine Ben Ebbrell from SORTEDFood going crazy for this?
Who doesn't LOVE mint?!
+Jamie Oliver's Drinks Tube no one sane, that's for sure. Ben Ebbell has an obsession with mint. It's really cute.
why it's called beer
Traditionally ginger beer had a bit of alcohol in it, and is brewed in a similar way to beer!
I was actually looking forward to see ginger infused beer. Like. the real deal. Acutal beer. But then it was only ginger ale. :(
If you want to make actual ginger BEER, then instead of adding soda water add flat water after straining and include a little less than a gram of champagne yeast in a pressure resistant sealed bottle. Give it 48 hours to lightly ferment and you will have a naturally carbonated slightly alcoholic still sweet ginger beer.
Holdthefuckingphone! Last time i checked, gingerbeer needs to ferment for a week or two in a sealed jar?? i mean, i loved the video and im sure it tasted awesome, but that's ginger cordial!
DMeistro3 Wereholdingit! Your new fangled definitions hold no sway with us. It's Ginger Beer and we're sticking with it :)
but dont you need to make a plant? i thought beer implied that the liquid had fermented and carbonated itself? i mean absolutely no offence, it looks awesome and ill probably make it soonish (i have a ginger grove) but the title beer just seems a little misleading :/
jamie its xo xo
Lol why is this even age restricted?
This is not ginger beer. There is no fermenting, which is the whole point in making a proper ginger beer. Call your video ginger soda, instead.
DONALLL XXX
i'd to it without the sugar though :P
Why not add the sugar? At that point you have an overpoweringly tart and spicy concoction that is a bit out of balance. Sugar serves a role similar to salt in that upon more spartan templates it amplifies the flavors around it without imparting too much of its own. The addition of sugar allows the ginger to really shine.
Ethan Kaufman I would go for alternative sweets..
Like honey, i like to compensate on the taste between Ginger and the amount of sweetness it has..
This is Ginger-Juice, where can we find a REAL ginger beer to make?
Ginger beer is much better when you use powdered ginger and not fresh root. Rookies.
Did this with some wheat and made normal beer, tasted like shit but hey, I called it beer so that’s what it must be!
That is ginger ale at best, the beer part comes from it being fermented...
oohhhh this nigga was on the food channel on tv
This is a simple juice dude.
WHERE IS THE BEER
+prox1e It's a Ginger Beer (AKA Ginger Ale). ;)
If you let it ferment longer it can create alcohol
Why is it called "Ginger Beer" if there is no alchohol
Originally the ginger was fermented and most Ginger Beer was actually alcoholic!
+Hootcake oh
A beer that has No Guiness No beer just soda and lemon ginger
