  • Ginger beer (AKA ginger ale) is a wonderful drink that manages to be warming and refreshing at the same time. Here Donal Skehan shows you how to make a homemade, non-brewed ginger beer with fresh ginger, lemons, muscovado sugar and sparkling water. It's completely alcohol-free and perfect for the whole family to enjoy.

    It doesn't really make a lot of sense!
    1) Adding the soda before straining the juice/syrup will reduce really much the carbonation. Ginger beer supposed to be fizzy!
    2) I love ginger beer, which is really zesty - brown sugar, is rather the opposite [I rather would use it for ginger ale] - normal white sugar [or organic sugar] makes a much zestier ginger beer.
    3) Ginger beer is always associated with lime - not with lemon. Again - limes are zestier which helps the ginger beer in this department.
    4) Making a mixture like that, is a lot of work, and you can't really keep it. It would be better to make first the syrup and then last minute mix it with soda. Even using lemon juice, will spoil the mixture very soon [about 12 hours].
    5) To get a "commercial tasting" ginger beer [commercial in the best meaning], use citric acid instead of citrus juice, and just add the juice at the end.
    Optional: lactofermented ginger beer, is definitely made different - but takes far more time - and is not everybody's taste!

      I personally find the molasses flavors of demerara and turbinado sugars don't so much lessen the zestiness of the ginger but add a greater depth and more complex palate than plain white sugar. Plain white sugar while nice creates a more two dimensional palate of sweet ginger and tart citrus. Whereas the molasses notes of demerara bring out a layer of the ginger I had not before recognized and I am unable to fully articulate.
      The problem with using lime zest in place of lemon zest is the fact that lemon zest holds far more in the way of essential oils, as well, lime essential oils are largely bitter and vegetal not adding to the depth of the ginger in a really meaningful way. Alternatively, the profusion of lemon oil from the zest gives a wonderful bright citrusy depth of flavor that is missed with lime. As for the juice I do agree with you that lime juice is more agreeable than lemon.
      On top of that, I have just made some ginger beer this evening and I opted for 1% citric acid by weight as opposed to actual citrus, partly for longevity purposes but also because citrus juices do not do well for maintaining carbonation. I force carbonate my beverages as needed using a rig I built, but even with this rig citrus juices typically cause all of the CO2 bubbles to immediately bubble out of solution the second pressure is released.

      That's a good thing that for fermenting ginger beer you just have to leave it in a jar for a week or two. How amazing is that ?

    I would add the soda water after it is infused for 10mins. The bubbles die quickly and you loose even more bubbles after it is mixed and transferred to a new jug. Looks great though!

      I find that this is still my favorite ginger beer. I've been making it for 5 yeas now and I've tweak it, sometimes more ginger or more lemon, but if its been a while I'll go back to this video and get inspired again. Thanks again!!!

      LOL, it's still the best drink. I juice the ginger and lemon and make a concentrated syrup, and then I add that to a cup and pour club soda with ice.

      margaret928 it's a sweet foamy drink made out of butter, brown sugar and cream soda :D made popular by Harry Potter as that's what teen wizards drank when they were in pubs. Some Harry Potter theme parks sell it and many others make their own version :)

      Jamie Oliver's Drinks Tube I sure did, it was lush. I doubled the recipe and put it in a carafe Alot of grating but you are right it was worth it and then you have the lovely refreshing Ginger beer. My OH was putting rum in his and whiskey in another one, i can drink again now so may give that a go too. Will send you some pics next time i make it and you can bet i will make it again Thanks again.

    Hi! I want to make some homemade ginger beer for cocktails on a party, but fear the fizz will not last, is it recommended to make the base, strain it and pour it into a flask the day before and then adding carbonated wates as i need it? How long will the mixture last in the fridge uncarbonated? Thanks! :D

    That looks rather tasty. Though it seems to be a bit expensive to make I would think. I will have to see ginger can be grown where I live, as that would be the most expensive bit to come up with. Fresh would always trump canned.

    Can it be made way in advance, by storing the ready product in airtight container and keep it refrigerated until it's ready to be served?

I was thinking about taking fresh brown sugar and adding a bit of molasses to give it that heavier, stickier flavour?? Oh I live in rural Germany - i might find it in a speciality shop in a large City, but otherwise "exotic" ingredients are hard to come by

      Laura Carruthers Hi Laura, it would lose it's bubbles fairly quickly if you didn't drink it the same day. That said, you should be able to keep the syrup refrigerated for a few days after you make it. Hope you enjoy it.

    always wanted to know how to make it myself. But how can i really add sparkles? Adding soda water and waiting 10 minutes will leave me with nothing. How about about adding yeast?

    Donal Skehan Jamie Oliver's Drinks Tube Next time you're peeling ginger, try using a teaspoon instead of a knife. It works shockingly well and it doesn't take as much ginger off with the peel.

    No worries. It will be when I inherit that I will be able to grow my own produce. The house I am presently to get is not in any shape to move into, A total refurbishment is needed. So I can't do any gardening as I would need to live there to tend and protect it from thievery. I was just thinking out loud about it. I do love ginger beer. I don't usually drink fizzy drinks. Ginger and root beers are what I like most, but rarely buy. Making your own fresh sounds a treat.

      Jamie Oliver's Drinks Tube If I get my moms house, I will have a hydroponic system in the basement. If I get the house I grew up in, I will be putting a high fence around the back yard. It's a small town so I am not expecting a problem. It's just that a friend in Arizona just had her huge watermelon stolen from the community garden last week. And it doesn't have any protection.

    Is Muscovado sugar the same thing as brown sugar? Or is it something completely different?

    I am in Tiffin, OH. A rural county seat in NW Ohio, of under 17K. So getting fresh ginger, much less the cost, is a bit hard to do.

      That sounds a lot like a beer that Leinenkugel makes for their winter seasonals, They do a cranberry ginger shandy. Although this version of yours would be non alcoholic and far more prominent in the cranberry and ginger flavors. All the same it is a delightful flavor combination

    Hey you, Jamie, it would be great if you could write the ingredients in the infobox of your videos, just because some people have an accent or some maybe dont speak english as their mother-language, so it would be much easier for people (like me ;) from germany) to find those special ingredients we sometimes need and don´t even know them before ;)

    If you want it alcoholic, you can just use still water instead of soda water and a bit of yeast, then you leave it to ferment for a couple of days. Not that difficult.

      Adelyn Tan Tradition. It's been called Ginger Beer for hundreds of year and doesn't (usually) contain alcohol, although there are some very delicious British Ginger Beers available that DO contain alcohol too. Confused yet?

      If you want to make actual ginger BEER, then instead of adding soda water add flat water after straining and include a little less than a gram of champagne yeast in a pressure resistant sealed bottle. Give it 48 hours to lightly ferment and you will have a naturally carbonated slightly alcoholic still sweet ginger beer.

      but dont you need to make a plant? i thought beer implied that the liquid had fermented and carbonated itself? i mean absolutely no offence, it looks awesome and ill probably make it soonish (i have a ginger grove) but the title beer just seems a little misleading :/

    This is not ginger beer. There is no fermenting, which is the whole point in making a proper ginger beer. Call your video ginger soda, instead.

      Why not add the sugar? At that point you have an overpoweringly tart and spicy concoction that is a bit out of balance. Sugar serves a role similar to salt in that upon more spartan templates it amplifies the flavors around it without imparting too much of its own. The addition of sugar allows the ginger to really shine.
