- In this video you will learn how to make a royal icing recipe with egg whites. No need for expensive meringue powder. It's very easy to make. It take about 10 minutes and you can store your fabulous icing in an air tight container for days. Keep it covered with a damp cloth while working with it. It does dry very quickly. you can make icing Roses and other flowers, drop strings, and fancy scroll work. I'll be sharing a video with royal icing decorations next week. Stay tuned. Hi Rose. You can use royal icing for piping ( it dries hard ) Pipng flowers ahead. They dry and then you can store them for months in an airtight container. Use ot for detailing coolies. YOu can also thin it and use it for runouts. You know the cookies that have the hardened and smooth icing on top. There is so much you can do with it, I haver a video on this channel of making Royal icing flowers for a wedding cake.

Yes tightly covered and if you want to keep it fresh longer add a moist paper towel to the container. YOu can re whip it . I wold say for a few weeks as long as refrigerated. Check it ocassionally to make sure it stays moist.

Yes you can. They are delicate so if possile make back up pieces.I made swans once for a topper and have made transfer letters. The letters are very pretty. The Swans were too but a lot ofo work. I made your recipe again and again.. I cant say that you make me love the kitchen.😍.. Dear i have a question.. I sifted the sugar and the lemon juice.. But the icing stuck when I'm using wilton tip 1 is the problem from fresh egg whites?
Thanks. So happy to hear that. The 1 is very tiny. Sometimes a speck of powdered sugar can get stuck or even the royal icing starts to harden. Use a pin to open is back up or run the tip under warm water for a few minutes to dissolve the icing a bit. .

Yes you can. The lemon is optional. I would wait until close to the end to add the vanilla extract.

Yes it does the exact same thing that the meringue powder royal icing does. Great question.

Hi No you don't have to use Lemon juice. you can use a bit of water if needed to thin it to the consistency that you want.

I woud use water to replace the lemon juice. Vinegar wouldn't taste so good.

I've used the royal icing for lettering. Do you mean piping onto waxed paper, drying and then placing the dried piece on the cake? If so yes. The thicker the piece the longer it takes to dry. Thin pieces like lettering, I would say give them at least a few hours? Its been a while for me making them.

Do you make the icing as you did and then you can separate and add food gel? What is the best way to make different colors of royal icing?
Yes make it and then separate out small amounts to color. YOu can use gel, paste or the liquid ones. Just know that it will thin it a bit if you use the liquid. In which case you can add a little powdered sugar to thicken it back again,

Yes the flowers and decorations that you create with this dry hard and can be bagged, They are delicate though. You may want to place them in boxes with some cushioning and then wrap in plastic or in bags etc. They dont need baking. I believe they are speaking about baking meringue into cookies. I don't believe I have ever frozen this icing before. It will keep for weeks in the refrigerator. It may separate and you may have to re mix it before using it. You can always add a touch of powdered sugar or lemon juice/water drops to get it to the consistency that yo want.

It's usually best to get your eggs to room temp. Here is what I do if the eggs are cold and I want to use them right away in a recipe. I simply put them in a bowl of very warm water for about 5 minutes. Great question.

Hi Yes YOu can use it for cookie decoration. No need to bake it. Use fresh egg whites or pasteurized ones from the grocery also will work if you;re concerned.

yes you can make all kinds of flowers with this. Just as you would with buttercream. They dry hard and you can store them in an airtight container for a long time.

Hi, is it normal to feel sugar pieces in mouth, in royal icing?
Once the royal icing hardens than yes. But the soft royal should not have sugar crystals in it. That would make it impossible to pipe.

Hi Liya Yes. it does. I haven't used meringue powder in a loooong time. This works perfectly. Give it a try/ You can adjust it to fit your needs. More or less powdered sugar. A drop of water or lemon juice more or less and so on. Store it in an airtight container and use it later. It works beautifully.
Thnx for the recipe but I'm having trouble with knowing some of the ingredients. Just how much was used especially for the lemon juice and what the other powder was asides from the sugar
The other ingredient is cream of tartar. You can get that at your local grocery store. The juice amount is squeezed from 1/2 a lemon. You can adjust the amount of juice if your royal icing is too firm. You can also add powdered sugar if your royal icing is too soft.

You're ok without it. The lemon juice (if you have that) will replace it. But if you don't have either it still will be ok

yes they will be fine for a few days fresh and you can always freeze them too.

The flowers are air dried. Usually within a day or two.

Yes either one wuill work. I prefer lemon juice as it tastes better and it is said that Lemon juice makes it stronger for drop strings etc.

What is the lemon juice for?
Adds strength to the icing as well as flavor But yu can also use water if yu dont have a lemon in the house when making it. The icing can be thickened with more powdered sugar and or thinned with liquid. A few drops at a time to the correct consistency.

Yes and you can leave them out for a few hours prior to making your icing. Or you can warm them in a bowl of very warm water for 5 minutes.

You can re whip if necessary. You can also add additional powdered sugar to it if needed. Or vice versa add lemon or a drop of water to thin it out at anytime.

Hi Rehana, You can store it in an airtight container for a week . I like to put a pice of damp paper towel to make sure to keep oit moist. You will need to stir it begfore using. You may have to add more icing sugar (powdered sugar) to thicken it a bit or lemon juice to thin it. Depends on what you are using it for.

I would say a day or two . After that refrigerator. Always on an airtight container and it will most likely need a good stir before using after storage.

@@melanigarrido2378 Thank you . I don't know for sure. The dried egg whites may or may not be safer. I do know that sugar is a preservative. Once dried you can store piped flowers in an airtight container for months at room temp. The reason I know this is because I have done so many times. Are you planning on piping it onto a cake? Or making flowers? Or do you mean storing it in a container at room temperature prior to piping?

Hi Prova. Not sure what you mean by the stiff pick one. It does get stiff very quickly. Or I should say it hardens fairly quickly. I use this to make flowers on toothpicks. Maybe that is what you mean?

I would say for sure a few dozen. Depends how you will be decorating them too. Run outs? or piping aroud edges etc. Ive taken break from this since moving to Florida but a little goes a long way. So maybe many more cookies. Have fun!

Quite a long while. If they are well covered. Not sure exactly. But it can be left out after it dries on a cookie no problem. I have made flowers with this icing and they last for months.
What size eggs? regular, large, extra large, jumbo?
I would say Large. I use them for the most part. But you can play with the amount of sugar and water / lemon juice. Its a flexible recipe. The moisture in the air can affect it. So you may need more or less of the sugar and or liquid. I hoe that helps.
About how much does this recipe make?
Around 1 1/2 to 2 cups. Its been a while since making it as I just moved to Florida and havnt baked for a few months. Hoping my memory is correct.
How long does this icing take to harden?
Not long. Within minutes it will start to get crispy in the open air. If you have a rose or some other thick flower let it dry overnight . You may notice that the part that touches the wax paper will still be a little soft possibly

Hi You can omit the cream of tartar. The Lemon juice will do the job.

Yes, it is. I've been making it this way since day one. I believe the lemon juice and sugar work as preservative. Just make sure to use the freshest eggs possible. You can get the same results with the meringue powder though if you are worried about using fresh eggs. Just follow the directions on the container.

In this case yes. The lemon juice helps as an antibacterial and keep the frosting refrigerated in between use. Once dry on the cake it's perfectly fine. If you are concerned you can use pasteurized. I find they don't whip up quite as well. You can add a pinch of cream of tartar to help with stabilizing the whites.
