watching him chop the mushroom and seeing pieces fly all over his kitchen has given me consolation
Same hear! And he uses both hands to open his cracked eggs! I somehow feel validated in insisting on using two hands instead of using one hand and picking out egg shells until I’m “good enough” at cracking an egg. This is a chef that is more concerned about teaching than showing off. Bravo 👏🏻

@@mbeanlynett you are 100% right and you beat me to it. The man has two Ivy League degrees including a Masters .. he was the head of Howard Johnsons ..and one of the most talented, celebrated Chefs in the world. He probably gets to use a brand new pan every time he cooks and good for him, he has no fucks left to give.
Jacques is somehow a well known, yet under appreciated master of cooking. I'm glad he goes out of his way to show us his knowledge.
Jacques has always been low key, but no one is more highly regarded by other chefs than Jacques. I watched Anthony Bourdain tremble like a school girl in his presence.
Teaching was his calling. Read his book. Be inspired by this master.

The man is an absolute treasure.
The thing I've always liked about him is that he is open minded and doesn't look down on certain types of food.
The rest of the world seems to be this way. They don't claim to know it all.
He makes it look so effortless. Nothing rattles him. Graceful elegance, yet unpretentious.
I like the way he explains every step and why it's done this way, knowing why is important.
Some people tire of hearing about cracking eggs on a flat surface, but those people are pointedly forgetting how they once didn't know that shit either!
This is it.
I don't just want to know that you are doing something, I want to know *why* you are doing it.
If I'd have learned more of the "why's" than the "how's" when I was younger, I'm sure I would have continued a career in cooking. Maybe that's on me for not being too interested at the time, or maybe it's on my teachers for not *making* it interesting.
@@JJ-pi4zj Or maybe it's on capitalist governments, who give teachers a "laundry list" of things they _must_ get through every semester, but not enough time to do it as genuine mentors.
The easiest step is knowing what, then how, then why.

I'm always fascinated to see Jacques use a metal fork in a non-stick pan.
I figure he must have expensive cookware. When my mother does that I cringe.
Those kinda high quality pans can take it I reckon
maybe it's anodized aluminum. you can use metal utensils for the most part.

Seriously though, I think it’s anodized aluminum like someone else said. Pretty tough stuff but can still be scratched with metal
They use brand new pans from their equipment sponsor on every cooking show. This is a terrible idea to give people. Sorry but Jacques can do this (and so can you) with a properly preheated stainless steel pan.

Mine starts out exactly like that, around the 40 second mark I realize that I am making scrambled eggs.

I do that too sometimes. Two keys is to not stir it around that much, the other is if you see gaps forming and the liquid isn't filling them up, smear the top of the omelette around until it fills in (like you're spreading icing on a cake).

All I know - and you know too! - is practice makes perfect. So watch the video again - try it again. Wash, rinse, repeat! You will do it!
I'm going to do this "sans" ( I'm not brave enough) fork.. small wooden spatula should do the trick.
When you get to that point, you let it sit until the 80 second mark, cheat, and jam the whole thing under the grill for a minute. Job done :D

I remember one particular episode where you were cooking sugar and your dipped your fingers in water & grabbed the bubbles of molten sugar to test what stage you were at. We both were amazed.
The Master Chef yet again gives a lesson that is something reachable to any person, even if they have limited means. This is harder to do than requiring students to have a full kitchen with everything, and access to every kind of ingredient. His engriedient is love here!

I love making omelettes for my friends and they always say two things: I didn't know eggs could taste so good and where did you learn this? I owe it to Jacque. Watching him and Julia cook on PBS as a child gave me a passion to cook and showed me how food brings people together. What a beautiful man he is, so full of love and kindness.
I am turkish and watching this from istanbul, yet I feel like a relative to this old man. he truly puts love to the meal.

I'm starting to doubt that these were recently recorded. It takes a lot of the excitement out of it. These must be from months, or years earlier. I'll see how long it takes for this channel to answer my previous questions, regarding when these were recorded, before I decide to unsubscribe, or not. I want to be subscribed to a channel that is actively working with Jacques. If I don't know when this was recorded, then how can this channel be trusted with providing new content? It's truly amazing, how far a little bit of information goes. It can mean the difference between keeping subscribers and losing them.

What I love about this recipe and the way Mr. Pépin prepares it is that it is practical and something I would really want to prepare for myself and enjoy. Seems simple enough to make and looks incredibly delicious!

Depends on the pan. If its a normal shop bought non-stick pan, absolutely not. A professional pan, absolutely okay. Amazingly the shop bought non-stick pans that last a few years can be more expensive than a professional pan that will last the average home cook a lifetime.

I learned how to make the classic french omelet from Chef Pepin on his PBS shows several years ago. They are fantastic and he's a wonderful instructor. I used to love watching his shows when i was a kid .I wanted to cook like that. Now many years later i have a cupboard full of spices and a garden to supply all the things i could not get when i was a kid.I will enjoy this omelette for breakfast .Thank you so much !

When I first started cooking omelettes I came across Pepin's previous Omelette video and I've been making / perfecting these for 7 years already. Crazy that he just put out a nother video on this.
This is how I was taught to cook an omelette by my Dad. I still prefer this method.

Dear Monsieur Pepin, I am a great fan of all your videos but particularly this one. I have been trying to cook a good omelette for many years but to no avail so I gave up as they never came out right. But I watched this video and it inspired me to try again and this time it worked !! Not 100% perfect but a good 90% and I can se now what I need to do to improve next time. I also adore your 'fridge' soup as many of my recipes are made up on the spot depending on what is in the fridge or freezer. Thank you for being a great teacher and chef. Kind regards Kate
