I agree - the last time I did this with (at the time) Bellwether Brewing they purposely picked a tree that had an insane orangy smell. Next year we'll forage for a tastier tree :)
There will be 30 year old sitting in an office in 15 years listening to "'Genus' a Taxonomy of Beer. The story of Genus Brewing" and they will wonder if they too can be as great as Peter McArthur.

Happen to have a SMaSH Juniper going right now. Just Cali US-05 on some 2-row, Chinook, and a bunch of juniper berries. My first round was great but upped the berries this time. Happy Tree Beer season!

Is this the recipe that Hidden Mother used to brew with a pine luge and needles? That was some really good tasting beer before they closed.
The inspiration was based off what they did but it's not the same recipe :/

You'll definitely want to use an enzyme that's out on all major platforms now.
How did the hard water work ? Would you change it ?
Would adding some hops or not using 40% brown sugar also help with that sweetness?

That looks like a fun brew day! The tree luge looks cool, would you consider it cheating to use spruce tips instead of the pine needles or did you like them but just using way less next time . 🎄🍺
I think the Spruce Tips would definitely help for next time. Overall I liked the flavor but after the beer was conditioned it just ended up being way too much.
Does it matter what kind of Christmas tree you use? I know some species are poisonous to eat so I’d be interested to know people’s thoughts…
Wait a minute, I'm 2 minutes in and you added ascorbic acid ? Aren't pine needles already high in ascorbic acid ?
True - they are! But since we added the tree at the end of the boil we didn't get mash ass-korbz that can expedite maillard rxns
