    I cook without measuring. My Mom cooked this way. I would ask for her recipes and she said there were none. So though the years and some phone calls I perfected the dishes that I grew up with. Cooking through the smells telling me the time. The secret to fried onions and potatoes is to only flip once or the potatoes can fall apart. When you smell the potatoes crisping up use the spatula to move the onions and potatoes and if they all move together it is time to flip'em folks.
