Is OLD WINE better? - What happens when wines are cellared and age!

  • What happens as wine ages and gets older, and which wines should you cellar? First off, not all wine are meant to lay down. There are a select few grapes like Nebbiolo, Cabernet Sauvignon. Chardonnay, Riesling, and a few others that develop well. For a wine to age, you need the right grape, the right producer, and the right vintage. Once that's all accomplished, then the fun begins. As wine ages two things change; flavor and texture. Flavors start to turn from primary and fruity, to earthy and tertiary. The texture changes from bright and tannic to smooth and rich. Finding these old wines can be tough though; unless you lay them down yourself, old wines are rare and expensive. Watch the full video for all the details about old wine!

    I make my own wine and i made some wine last year from table grapes and stuck some wood chucks in there in the bottles. After 8 months, when i drank my first one, it was awesome. Better than some store bought wine. Then 2 months later, even better. And now. I agrd a wine I wont open til next month when its one year aged. I cant wait for it

    Great explanation of aged wines indeed! Vince what's the oldest you had tasted?
    in 2018 a costumer brought a 1976 Estate Cab Sauv from Trentadue Winery to the restaurant I work, and asked me to serve, taste and describe it to him before I pour in his glass. When I brought it back to the table (after cork disintegrated😩) I asked him if he smokes cigars, he said that he used to but no more, so I told him; 'Sir' let's smoke a cigar together, half way the cigar, we'll put it out, we'll then cut it open and lick it....that's how that wine tastes like ... he responded... "that's how I like it'....

    Probably the nicest aged wine 🍷 I had the pleasure of drinking was a 1984 Stags Leap Cabernet Sauvignon. The year I was married.

    I try to age my wine all the time. It just never happens. I get thirsty...

    Do SECONDARY flavors (eg. oak flavors) actually fade over time? I have always assumed that they remain constant or fade very slowly, compared to tannins and acids.

      You're exactly right! Those are much more "permenant" if you will.

      @@visforvino as someone who has become very anathematic to oak usage, this is one of the reasons why good quality wines coming from good terroir must not be oaked for a long period of time. because oak flavors do not wane as much as fruit over aging. in fact, i hope that in the future wine-makers should shift to using amphora/ceramic fermentation to soften the tannins. Pontet Canet is moving in that direction, but still believes some oak is necessary. I wonder if its possible from a scientific point to eliminate oak altogether in the future.

      @@Spiritchaser93 For sure, I’m big on limited oak use most of the time. Concrete is definitely a good way to get air in without flavor! That being said, there are some wines that I think I would miss without those flavors. Rioja to me is defined by American Oak and the coconut/dill flavors it imparts. I would miss it!

    If you may, you missed one grape, Syrah. In my opinion, once you try old (good) syrah the young ones become almost unpalatable.😂
