Dream’s plan with the signs was to make it so George couldn’t place water or blocks to stop himself from falling or to break his landings since blocks can’t be placed on the same side as a sign (because a sign’s detection is the size of the entire block). I guess because of the version of the game, George was able to break his fall.
Yea before 1.14 you couldn’t place water on the same block that a sign was on but now you can because of water logging

1. Just incase if you don't know, hay bales reduce damage when placed before falling to that block, and some people use this if they don't have water bucket or ender pearls and this is called MLG hay bale
2. On the previous versions of minecraft (1.8 and below), water physics don't work, meaning that you can't place water on a block on signs, slabs, doors, and much more
3. There is another chest called trapped chest, this item can trigger a redstone signal when you opened the trapped chest, you can tell the difference between the chest and the trapped chest by looking at the lock around it, because the color of the normal chest of the lock around it is brown while the lock around the trapped chest is color red.

13:15 This is way back when Dream started being good at minecraft, obviously he's still better than the average player, but he wasn't that good and experienced and he didn't have a full reddit to help him out, so he probably didn't know of entity cramming and other big brain plays.

9:10 the point of the trap is to put down signs so he can't water bucket, but since they changed water mechanics in 1.13, fences, trapdoors, and other things like signs, can be waterlogged. But Dream forgot about that

the entity cramming needs at least 24 minecart which translate to 120 iron, and the fact that you can broke the minecraft very easily with a weapon, it would be safe to have 30+ minecarts, which means at least 150 iron, it usually takes around 30-40+ minutes to find this much iron and smelting all of them
