We sent TopJaw to Toff’s of Muswell Hill to find out how it’s done properly.

Established in 1968, Toff's is an award winning fish and chip shop owned by George and Costas Giorgious which prides itself on serving fresh food at reasonable prices in a family friendly atmosphere - somewhere you are greeted as a customer but you leave as a friend.
As well as the more recognised range of fish cod, haddock, plaice, rock and skate, at Toff's they extend their choice to whole fish like whole plaice, lemon sole, dover sole, sea bass and trout.
Historically, the marriage of Fish & Chips dates back to 1860 in Northern England near one of the many fish docks. The original recipe was to fry the pair in beef dripping, but it was in London's east end that they started frying in oil. Traditionally, fish and chips were flavoured with salt and vinegar and consumed with your fingers straight out of the newspaper in which they were wrapped. Cod and chips is the Londoners favourite, but that's not true for the whole country. Ask for Fish & Chips in Grimsby, and they will serve you Haddock, however in Wales you will most probably receive Plaice. Fish & Chips became essential to the diet of ordinary men and women and are now as fashionable as ever.

Believe it or not i have made my twist & take of the British Traditional dish that Fish & Chips. To make the batter i used cold water & salt & mixed it to form a nice batter not too thick & not too thin. The result it works perfectly !
I'm a regular here - and really, this place is amazing. Try the grilled fish instead of battered with all the trimmings.

Can't beat good old classic British Fish and Chips!!
In Manchester they serve cod but also offer haddock and fish of the day which can be plaice, halibut, ect.

For gods sake its a chippie,and as anyone who knows their fish & chips know you must go north,ive tried em in London and they dont come close to the Midlands or north England,and anybody will tell you that you dont sit in a restaurant to eat fish and chips,or use a knife & fork,you eat em out of news paper & with your fingers,and you dont get ripped off as you do in London

We left our home port at Anchorage Alaska and went to Ireland where I was introduced to Irish Fish and chips with mashed peas. My own taste buds to this day prefer the Pacific cod with haddock followed next!! I sure miss Haddon salt esquire fish and chips in the states

I live in Wales and whenever I ask for fish they always serve cod. Other types of fish are on the menu but unless you specify, cod is always the default.

We eat cod up North unless you're from the land that time forgot (Yorkshire - or Haddock Country to make the point further)

They don't give you plaice in Wales. You can have place here in Wales if you specifically asked for it I may have it but it is usually cod.
I grew up and lived in London for most of my life. One of the best things about fish and chips in London is that you could have a variety of fish; not just cod. In London, you could have cod, plaice, rock salmon (huss) and my favourite fish of all: skate.

You want real fish & chips, head to Beshoff's in Dublin. They've been doing it since Moses was in short pants. The real deal, without all this "And will the gentleman be dining alone?" bollocks. Besides which, anyone who calls a chippie "Toffs" really is begging to be made an example of.

I've been here a few times and trust me it really isn't that good, bog standard at best and the staff act like waiters at a Michelin restaurant; totally stuck up. If you are in the area I would recommend the "Priory Fish Bar" just the other side of Ally Pally. They always manage top quality Fish and Chips at a sensible price without creating a song and dance about it.

I don't know about these fancy dan places. There's a thoroughly decent traditional fish and chip shop in Waterloo called masters superfish. It used to be really cheap for takeaway but last time I went it was more pricey, but no doubt still a quarter of the price of this place.
I've been to both and Masters is far, far better than Toff's. It's where I send tourists who want to try authentic, quality British fish and chips.
You want great fish n chips you go somewhere you can see the sea. Respect though for the "hotter than the sun" Partridgeism, Jurassic Park!
The blue lagoon fish and chip chips are brilliant in scotland !

Plenty of good fish and chip shops for half the price and none of the nonce and ponce of this place. Find a good one at a good price and stick with it. Can't go wrong.

Love fish and chips. Here in South Carolina we have a place called the cod father, the owners are English, and the place is a sensation. Love getting the chips fried crispy, then smothering both the fish and the chips in malt vinegar! Good eating!

That's the ultimate cold weather hunger killer. We have similar restaurants in the American South, only seasoned cornmeal or flour is often used instead of batter.....on flounder......and fried in peanut oil. If I found myself between a plate of British fish and chips and Southern flounder and fries.....I'd eat the hell out of both LOL. The British also do hushpuppies similar to the Southern style.

I'm a fish and chip fan. I need to try this place. Although I doubt it very much it will defeat my local shop. Its called Hi-Fri fish bar on High Road, Leyton E10. Its located opposite the Tesco store. The queues are very long especially on weekends. So much is their demand they've even opened up on a Sunday. Read the google reviews for it and pay them a visit.

A review of a chippie is useless unless we are told what the frying medium is. Octoron
Absolutely not true about being served haddock up North, the default is always cod. You can usually get haddock, but it's always listed second on the menu and if you don't specify either way then you'll get cod.
The biggest differentiator is what you get on the side; I've never seen scraps on offer in a London chippie for a start, and gravy or curry sauce don't seem popular. Conversely, we don't normally do tartare sauce up North.

Somebody has to teach you guy's how to cook "chips" they are the palest most anemic looking things on the planet. Serving those
things to people would be like someone ordering toast, and all you do is put it the toaster for a few seconds and warm it up. It's the browning, the caramelization of the outside that creates the flavour profile. The same way browning meat causes the maillard reaction.
