    Another great ferment recipe that my sister, Tiffany, and I made when I went to visit my sisters in Hawaii! While we were making this fermented curtido we got to chat about a lot of tips for beginners to fermenting. This is a delicious El Salvadorian cabbage ferment with peppers and oregano! Unusual and delicious spicy ferment.

    Just made some to go with my pupusas and salsa. It's super delicious and cuts that richness perfectly! It tastes SO good and it's an incredibly simple and intuitive recipe. 10/ 10 would recommend!

    When I was making my suarkruat it occurred to me curdito, which I had made several times, (the recipe called for softening the cabbage with boiling water and adding vinegar) is supposed to be a fermented food. I put in those search terms and found it. My first quart of fermented curdito has been on the counter for three days. I am so excited to try it.

    Finally found your Curtido recipe...I've never put lime in mine. I just use cabbage, onions, carrots, oregano, and fermented red pepper flakes. Well...and salt, of course. I do about eight heads at a time and am lucky to make it last 8 weeks. Which means me and hub put away a quart a week. lol

      The lime adds a little something, next level. Ya I usually have a cup of something fermented a day 😂 that doesn’t count fermented drinks

      @@FermentedHomestead haha. Well, you just talked me into a pineapple-coconut kombucha I bottled about a week ago! ;-) Got a blueberry-strawberry batch on it's second and fixin to do a batch of peach. mmm...I can't pick a fav! They're all so darn good!

      @@FermentedHomestead I may try a small batch with the penos and lime and see how we like it. Last time I did "plain" sauerkraut, I added the red pepper flakes and it was SOOO good! We love some spice!

    Looks delicious , I love curtido and have to agree with you there is something about oregano I don't like lol

      It’s really good! Once I was expecting oregano it was good! I’m going to try without and see if it’s even better

    I think you are supposed to use Mexican oregano. That may be why the off flavor.

    Curtido has been in my new food queue for awhile, right before that fermented pineapple drink. Hey, you’re in Hawaii so how about the pineapple drink?

      That is on the list 😃 I’m just waiting for tomato season so it’s as flavorful as the last batch and not watered down disappointment

      I checked it out and it looks like they’ve rebranded and likely cut the recipe. I’ll keep hunting for an alternative

    Was it Italian oregano or Mexican oregano? Mexican oregano gives it a whole different taste.

      I used Italian because I couldn’t find Mexican, I still haven’t found it 😬 but I have heard it’s a totally different taste and I want to start growing it
