Agree, the ribbons is some of the most spectacular diving, I've only dived them once out from chilli beach/portland roads and was amazing. Had my 1st and only whale shark encounter there too and saw the biggest spanish ive ever seen on a pinnacle that came up to 10 meters out of 80 metres! There's some insane channels and mounts up there.
Stella footage! To dry out your fish just leave it uncovered in the fridge & for crispy skin I always salt the skin & start in a cold pan with low heat.

Thanks Shell, I’ve been reading a bit about this lately and just said to Michael the other week I want to start avoiding rice bran oil after learning how highly processed it is. Like motor oil, which is why it’s smoke point is so high 🤢 I love olive oil but it’s no good for frying like that. Any suggestions for a replacement oil for high heat?
