Yes you can take any fish of your choice... (Excluding boneless)
Cooking gravy on a tawa?
Yes.... Because it is a continue process and since the quantity of gravy is less there is no requirement of another pan.
Tomatoes are not added u have to put tamrind
I have added tomato while grinding masala paste and in the whole recipe I have used more quantity of lemon juice + vinegar + tomato which is a substitute to tamarind.

everyone is trying to make their own version of Masala fry. though it might taste good but it will always be rubbery and not like the soft and juicy masala fries you get in Restaurants. the trick is to boil the fish in water adding haldi and salt for 10 minutes. then remove the fish and saute it in the masala you have half cooked. you can add little bit of the haldi water in the masala as well to adjust the thickness and enhance taste.
