    So i used 1/4cup of butter in the batter and this cake turned out lovely and light in my 10 inch iron pan, flipped out pretty nicely too, only a few pears slices to pick out, to make it festival and colourful i cooked pomegranate seeds with the pear, candied fruit and nuts would make it even more presentable, but one son has food allergies, thanks for a good video and recipe!

    Is there a reason you didn't show turning it out of the pan onto the plate? Because that's the hardest part and the step I would most likely screw up! At the beginning you said it was "easy".

      Release the edges with a knife or spatula. Do it while the filling is warm. Put your plate on top, flip over.

      She probably had to do it 4 or 5 times to get the perfect one for the video. :-) Still, it would have been nice to see the effect.

      She’s not a chef. She’s like a personal assistant or something else (it’s like she’s struggling to get through each step). You are absolutely right; turning out the upside cake 🎂 is the most important step... peace and hugs KP

      @@karenpereira7797 You end your remarks with "peace and hugs," so I guess we can only assume that you don't intend to be belittling and caustic, but . . . Lindsay is an editor at Martha Stewart (I somehow get the impression that they're not desperately recruiting "personal assistants" for recurring segments over at MS Omnimedia), and she has also developed a lot of acclaimed recipes for the magazine during her tenure there.

    Oh well, I wanted to see the cake turned out... but I heard you say turn it out right away, so the sugar does get a chance to cool and stick.

      Caramel sauce:
      4 tablespoons butter
      1/2 cup packed light brown sugar
      3 ripe but firm pears (Bartlett or Anjou, for example), peeled and cored
      Cake Batter:
      1 1/2 cups all-purpose flour
      1/4 teaspoon salt
      2 teaspoons baking powder
      2 large eggs, separated
      1/4 teaspoon Cream of Tartar
      1 cup granulated sugar
      1 stick (4 ounces) butter
      1 teaspoon vanilla extract
      1/2 cup whole milk
      Hopefully this helps, even though it's not by weight.

      Yeah you can but it's a bit stiffer so you might wanna use a more liquiddy caramel

      remah abd it’s an upside down fruit cake. You can use whatever fruit you want; apples, peaches, blueberries, strawberries, pineapples; pretty much anything.

    You don't bake an upside down cake in a skillet. Very difficult to turn out.

      Where I'm from, the south, we always make them in a cast iron skillet. It's supposed to caramelize the sugar and fruit better than a cake pan and it gives the cake a little crispness.
