Hi Malin! A Spanish follower of your videos here! I want to give you my tips for the perfect gazpacho: Very riped plum tomatoes, Italian pepper (the long and thin one), peeled cucumber, garlic (I would avoid adding onions), extra virgin olive oil, salt and vinegar (normally is Jerez vinegar, but just add whatever you can find in the Swedish shops). Some people add bread, but is not necessary. And for the texture really helps to drain the mix, it makes the gazpacho really smooth. Hope you have a better gazpacho experience next time :)
I never get tired of seeing that garden that you go to it's just so beautiful! There's so many different variations to gazpacho believe it or not and I love trying it different ways! I love courgettes sauteed with garlic but never put lemon on so thank you for that!
I am Spanish and I glad to see that you have made gazpacho which is a traditional food in Spain for summer am we make it quiet often. We use ripe juicy tomatoes and we just peel them but the rest goes in, nothing else is removed. About the pepper, it really doesn’t matter as long as it is green, I usually use the one you have used as well, but just a quarter of it. I use half medium white onion as well as one clove of garlic, half peeled cucumber, a pice of bread soaked in white wine vinegar or apple vinegar, a glass of water, extra virgin olive oil und salt. It important to let it sit for several hours, not only to drink it cool but also to bring all the flavors together, it will also thicken. You can drink it or eat it like a cool soup with some of the veggies that it contains in little cubes. I love it!! I love your videos and your recipes as well. I love gazpacho and eat it often when tomatoes are going wild in the garden. My easy recipe: Food processor or mince tomatoes, cucumber, pepper, onion, garlic and fresh cilantro or parsley. Put the chopped veg in a big pot and add one large can tomato juice, a good glug of olive oil and about a half cup of vinegar. Let chill in fridge for a couple hours to marry the flavors. This is more like a chunky soup rather than blended bisque type gazpacho. Almost like a salsa you get to eat with a spoon. It is very refreshing served ice cold on a hot summers day.

What a lovely dress Malin! I make gazpacho quite a bit in the summer and often put frozen white grapes in it. I got this from an almond gazpacho recipe but it works well in other kinds too adding a bit of sweetness. Great video, thank you.
I started making soup before I watched this but it’s so so hot outside - 😂 next time I’ll make this gazpacho, it seems so refreshing. And I love crossword as well! There’s a crossword in our local newspaper here that’s distributed a few days a week. I collect them to complete on Sundays or during lunch at work. I feel like it helps me get off my screens for a while and use my brain for something besides anxious thoughts. I can only do them in English though - I’m envious that you can do them in more than one language because there’s so much nuance in the clues (grammar, double meanings, etc)!
Yes, next time gazpacho is the way to go - best of both worlds 😊 And what a lovely crossword ritual you have! I'm still only a beginner both is swedish and english but when I know the words in the english ones I'm so proud 😁😆 I couldn't agree more that it's a great substitute to screen time. Hi, I have some pointers if you like: before using the raw onion let it soak for a minute in water, it will take the edge of. And you are right your tomatoes where not the right kind (they seemed to light and watery)... use the most flavourfull tomatoes you can get (sometimes cherrytomatoes are denser in taste). In Spain, Italy, Mexico... you would get the big tomatoes but they are soooooo good and have a profound taste because of the sun. Good luck!!!!!
Hi Malin - here Luis and Lucia, from Granada, Andalucia. We love your channel and always follow your yummy recipes. A few tips to make a proper Gazpacho the way it should be: 1. Use only: Pear Tomatoes or any other ripe red tomatoes (seeds included!!!!!), 1 green pepper and 1 clove of garlic. Please, NO ONION!! I have never heard of gazpacho using onions. Trust me. 2. Be way more generous with the Extra Virgin Olive Oil and Use cold water. Bear in mind the oil emulsifies with the water and gives the gazpacho a silky texture. For an even finer result, you can use a sieve to remove the seeds. 3. A good pinch of salt and a splash of vinegar (well done for using Xerry vinegar ;) 4. Last but not least: No cumin and no bread. Chill the whole thing for a couple of hours and that's it (no need for a 48h gazpacho quarantine here) Try doing this and let us know.🙃
Salmorejo would have even used more bread and no pepper, just tomatoes, bread, garlic, olive oil and sherry vinegar. Originally Salmorejo comes from Cordoba and other cities adopted it, even under the name of "Porra".
Seems like gazpacho might be regional as others on here who are sharing recipes all have different ones. All delicious I'm sure but definitely see some with onion
@@erykasr1 I think it also varies from home to home. I’m from Malaga and I was taught to make it with stale bread and to add a touch of cumin and to use onions, everything that Luis Castellon says not to do.
Hi Malin!! I love your videos! I wait for them every sunday. The color of the gazpacho is normal when it's homemade. Abundant and mature tomatoes are the most important ingredient. Garlic, salt, cucumber olive oil and jerez vinegar imprescindibles. The rest are opcional. Peeling the tomatoes also helps to get a better texture.

I thought the gazpacho over a large ice cube looked fabulous. If you ever have a disappointingly mushy watermelon, using that in place of all or some of the tomatoes makes an interesting twist. I also add lime juice and cilantro too. I never get tired of that garden. It always changing so like visiting for the first time eh? I think spring when it is all lavender and blue is my favorite, but dahlias are wonderful too. you are blessed to have that in your city. My home town is known for roses (Santa Rosa) and the horticultural genius Luther Burbank, but I prefer mixed gardens like you show over a garden of only roses.
Hi Malin, thank you for the video. The hummus bowls looked delish. What a beautiful garden, the flowers are magnificent. I always add a teaspoon of paprika to my gaspatcho, plus a sweet peeled and chopped apple. I know its not traditional but it balances the onion and makes the tomato less acid. The peaches and strawberries looked so juicy, i have never seen flat peaches before. As usual your photography is sublime. Have a good week ahead. The gazpacho looks okay. If you find the onion a bit sharp you could try soaking the onion in some water for a while. Also to change the courgettes a bit some chopped mint goes really well with the lemon

Flat peaches are probably one of my top 3 summer fruits - juicy, sweet and so aromatic! And with some creamy yoghurt and crunchy toppings they must be FANTASTIC! Also, I used to laugh and my grandma doing *so many* crosswords but it really keeps her brain sharp and I will definitely implement them into my routine at some point :D
I did a recipe similar to this not to long ago and I used roasted red pepper from a jar instead of green pepper which my daughter does not like and it turned out pretty good 🙂
Oh, maybe the pepper it's looking for it called Cubanelle? I love those. Some farm grows them in Ontario here and we get them more often in the summer. They're lighter in flavour and a touch sweeter? Almost like a grown up shishito pepper? I bet those would taste neat in there. Might be more flavourful though.

Hi there 😊 I avoid gluten as I have IBS and it irritates my stomach. Alcohol is something I just don't really enjoy the taste of and after partying with alcohol a bit when I was younger I decided it wasn't really for me.
@@GoodEatings alcohol does not agree with me either, makes my whole body hurt and gives me migraines. When I was young I so badly wanted to be able to party and socialize like everyone else but I just couldn't do it. LOL
