Pizza Port Swami's was one of my "come to jesus" beers that made me realise how complex IPA's can be. Later I was lucky enough to sit at the bar in Santa Rosa and drink Blind Pig, Pliny, and others from the source and understand just how brilliant Russian River is.
Interesting comment @35:50 where the MoreBeer guy (his name is missing from description :( ) says a good pilsner is 40-50 IBUs and Vinnie says 20s and 30s is too low, that they used to be higher in Germany 20-30 years ago. This makes sense to me, but I can't figure out from a few google searches, what is the highest IBU german pilsner now? It looks like Russian River STS is 36.0, which both Vinnie and MoreBeer guy said is too low. (??!). I'm familiar with the IPL style (India Pale Lager) which is basically a high IBU pilsner. I made it in my homebrewing days but it seems to have gone out of fashion commercially. So, are there any high IBU (40-50) german pilsners I can find commercially anymore?
In my professional sales day’s in Santa Rosa, CA Russian River is where I always conducted most of my lunch business with good clients. All there Beer’s are fantastic along with my favorite “Lola” pizza. Then of course I get a couple of growlers too go!
Hi Vito. *Great* Interview! One thing that remained unclear is which beers are open-fermented…all of them? It was unclear whether all their tanks are open or just some of them for experimental beers. Do you know or could you find out?
What’s the difference between the new Pliny recipe and the one you have on the website? No more crystal malt I’m assuming? How can I get the newer recipe?

I love to learn something that improves my recipes. Simpson Best Pale Malt & Dextrine/Cara-Pils are going to regular add-ons.
