I read the title and thought "of course you can!" because I tried to bunny hop a curb clipped in with a gravel bike and had recently installed some larger tires.....so of course I clipped the curb with the front tire and was sent end over end. Then I realized the title meant on purpose.

Still a gnarly dude! You need to know when to call it to be gnarly dude. That step up is already scary enough with a full down hill or Enduro bike, let alone on a gravel. The margin of error goes to zero. But there might be indeed a better jump to flip a gravel bike. Start with an airbag maybe? Some of your free rider friend must have one.

It’s pretty fun how MTB guys always use the drops. It’s more simple to use the top of the shifters (sorry I dont know the english word) because you don’t need to move your hands to use the brakes
It’s called riding on the hoods in English. I’m not sure it is safer when doing this kind of stuff. Riding on the drops is a lot more secure and gets your weight lower. On a drop bar bike it’s generally safer to descend in the drops - they aren’t just for sprinting and aero.
So you just admitted that a mtb'er is more comfortable on a road bike than you? The drops aren't just there for decoration. If it's windy or i'm going fast I'm mostly in the drops because of the extra security if the position.

Basically whenever you are in the wind in a race you should be in the drops. Kids pick this up and are very comfortable with it early on but a lot of adults struggle and always revert to the hoods.

They’re fun on flow trails, just make everything feel a little bit harder so a trail that might be a little boring on an MTB becomes fun again on a gravel bike.

In the 80's my older brother used to take his 10 speed on trails in the gulley by our house, back before mountain bikes, snow boards, and cgi.
