You know what kills me is a ton of the pictures that shows the drive-thru are nowhere near Iowa. That location is located in Greenville, Ohio. It started out as a franchise but split off during the depression. It is NOT like the others in Iowa and is a unique taste. It has been sold from the original family in Greenville.
When I was about 13 years old, I was grounded for, well, causing unspecified problems. I wasn’t supposed to leave the house. But I snuck out, walked about 5 miles… to get a Maid-Rite. I got caught on my way back. It was worth it. 😇
The vast majority of the locations left don't follow the original method though. It isn't the "recipe" as much as how they prepared the meat. Yes, its true one thing is there is a meat mixture you have to follow. The thing no one speaks of is though. The REAL maid rite meat you will notice a difference. The difference is the texture of the meat. It looks more like it was put into a processor after it was cooked. Making it smaller, less clumpy and fall apart. This is because of how the meat is prepared before being served. Because of the amount of meat made per day. They would grind the meat.. cook it. Then they would take the meat out.. and put in in a giant mixer with beef broth. It would mix around for quite some time with the broth, infusing the flavor and that's why the meat mixture is so fine. Then they put it in a steamer pan. The condensation on the bottom of the pan keeps it moist, so they stir it and scoop meat from the bottom as they make the sandwiches. Guaranteeing you always get moist meat. So if you go into a maid rite, you have the big chunks of meat.. or its being made on a big griddle and thrown on the bun. You aren't getting a real maid rite. You are getting the recipe that changed over years to save money and time. Basically the commercial version.
